In a large bowl, mix together the rolled oats, protein powder, and lemon zest. Add the milk and 2 tbsp. lemon juice. Stir to combine. Separate into 2 smaller containers with a lid. Place in the fridge overnight (or at least 3 hours).
In the morning, combine the yogurt, melted white chocolate, and remaining tablespoon of lemon juice in a small bowl. Evenly distribute over the overnight oats.
Garnish with shredded coconut and chopped pecans to enjoy!
