This healthy tortilla quiche is an easy breakfast or lunch that is high in protein and will keep you full for hours!
Ingredients you'll need:
1 burrito-size Tortilla, warmed
6 large Eggs
1/3 cup Cottage Cheese
Salt & Black Pepper, to taste
1 cup Vegetables of choice, finely chopped
1/3 cup Shredded Mozzarella
Fresh Basil, chopped, for garnishing
All the garden fresh veggies I added to my tortilla quiche:
green beans
shishito peppers
yellow squash
kale
fresh basil
How to Make a Tortilla Quiche:
Preheat oven to 350F. Line a 6-8" cake pan with parchment paper.
Press the warmed tortilla into the pan to be the "crust."
Add the eggs and cottage cheese. Season with salt and black pepper to taste. Whisk until smooth.
Add the chopped (and sautéed if desired) vegetables and mix just until combined.
Add the shredded cheese on top.
Bake for 15-20 minutes, until set in the center.
Garnish with the freshly chopped basil to enjoy!
This recipe makes a great meal prep breakfast since you can heat up in a toaster oven or air fryer until warmed!
