(Easy Breakfast) Egg-N-Hole Lox Bagels


These Egg-N-Hole Lox Bagels are an easy breakfast that takes under 15 minutes to make and will keep you energized until lunch!

Packed with protein from the smoked salmon and eggs with a slight crunch from the toasted bagel and earthiness from the garden fresh herbs… prepare for this to be on repeat!

What is a Lox Bagel?

Typically on a everything bagel, it's topped with thinly sliced red onions, cream cheese, briny capers, and lox (smoked salmon). It's perfect for both breakfast and lunch!

What kind of bagels should I use for a Lox Bagel?

My favorite is Everything Bagels, but you can use any savory bagel such as salted, poppyseed, sesame, etc. I made my Easy Overnight Sourdough Bagels Recipe linked here!

(Easy Breakfast) Egg-N-Hole Lox Bagels

These protein packed bagels are an easy breakfast that takes under 15 minutes to make and will keep you energized until lunch!



Servings: 1

  • 1 Savory Bagel, (such as Everything Bagel, Sesame Bagel, Salted Bagel, etc)
  • 1 Eggland’s Best Cage Free Egg
  • 1 tbsp Olive Oil or Butter
  • 1-2 tbsp. Cream Cheese
  • 4 oz Smoked Salmon
  • Capers, for garnishing
  • Pickled Onion, for garnishing
  • Fresh Dill and/or Chives, for garnishing
  • Salt & Black Pepper, to taste


  1. Preheat a griddle or cast iron skillet over medium high heat. Add the olive oil or butter to melt.
  2. Slice the bagel in half lengthwise. Place inside-down on the griddle. If needed, use a 1-2” cookie cutter to create a larger center hole in the top bagel slice.
  3. Crack the egg into the center of the top bagel slice.
  4. Once the bottom bagel slice is toasted and golden, remove from griddle.
  5. Either transfer the bagel to the oven at 350F to finish cooking for 4-5 minutes, or flip the bagel with a spatula to finish cooking until desired doneness.
  6. Layer the bottom bagel slice with cream cheese, capers, smoked salmon, pickled onions, and fresh herbs.
  7. Season the top bagel slice with salt and black pepper to enjoy warm!
