(Easy Breakfast) Egg-N-Hole Lox Bagels
These protein packed bagels are an easy breakfast that takes under 15 minutes to make and will keep you energized until lunch!
Ingredients

- 1 Savory Bagel, (such as Everything Bagel, Sesame Bagel, Salted Bagel, etc)
- 1 Eggland’s Best Cage Free Egg
- 1 tbsp Olive Oil or Butter
- 1-2 tbsp. Cream Cheese
- 4 oz Smoked Salmon
- Capers, for garnishing
- Pickled Onion, for garnishing
- Fresh Dill and/or Chives, for garnishing
- Salt & Black Pepper, to taste
Instructions
- Preheat a griddle or cast iron skillet over medium high heat. Add the olive oil or butter to melt.
- Slice the bagel in half lengthwise. Place inside-down on the griddle. If needed, use a 1-2” cookie cutter to create a larger center hole in the top bagel slice.
- Crack the egg into the center of the top bagel slice.
- Once the bottom bagel slice is toasted and golden, remove from griddle.
- Either transfer the bagel to the oven at 350F to finish cooking for 4-5 minutes, or flip the bagel with a spatula to finish cooking until desired doneness.
- Layer the bottom bagel slice with cream cheese, capers, smoked salmon, pickled onions, and fresh herbs.
- Season the top bagel slice with salt and black pepper to enjoy warm!
