Tomato & Chèvre Grilled Cheese Sandwich

Welcome back to my NEW Elevated Everyday Sandwich Series where we're taking everyday sandwiches to the next level. In honor of the first day of Summer, we're making these Tomato & Chèvre Grille Cheese Sandwiches that are crunchy, cheesy, fresh with summer flavors... aka it's THE sandwich recipe of the Summer!

This past weekend I made a blogpost explaining the inspiration behind this grilled cheese recipe as my family and I kicked off summer in Banner Elk, NC at a Historic Farmhouse. Check out that blogpost here!

5 Tips for the Perfect Grilled Cheese Sandwich:

  1. Ensure that you spread an even layer of mayo, butter, or brush on the olive oil onto your slices of bread. And spread It to the very edges! Good coverage is key to the golden brown outside.
  2. You can add as many or as little cheeses to a grilled cheese sandwich, but ensure you are using melting cheeses. Cheeses such as parmesan and manchego don't melt as easily; therefore, you'll miss out on that creamy consistency.
  3. Use breads with a tight crumb, aka find sourdough that doesn't have large airy holes or try a sandwich-style loaf.
  4. Think about your fillings before adding. Technically, grilled cheese sandwiches don't need 'fillings' but in this case, we're only adding thinly sliced tomatoes to add incredible juicy flavor. Other additions might cause the sandwich to be unappetizingly gooey and soggy.
  5. Be patient with the process. It's better to cook your grilled cheese on a lower heat for even browning rather than the cheese not melting and your bread is already burnt. It's worth every extra minute!

Can I leave out the tomatoes?

Absolutely! This is a question my brother would ask, because he is in fact not a mushroom nor tomato lover (unlike me Lol). As with any of my recipes, I encourage you to play around with the flavors and ingredients to not only match your personal tastebuds but also to challenge them with new flavors! The kitchen should be a place of comfort, relaxation, but also adventure 💃🏼

Tomato & Chèvre Grilled Cheese Sandwich

Crunchy, cheesy, fresh with summer flavors... it's THE grilled cheese sandwich recipe!

Ingredients

Servings: 1

  • 2 slices of Sourdough Bread
  • 2-3 thinly slices of Tomato
  • 1 tsp. Everything Bagel Seasoning
  • Pinch of Salt
  • 2 tbsp. Chèvre Goat Cheese
  • 1-2 slices of Cheddar Cheese
  • 1 tbsp. Butter or Olive Oil
  • Fresh Dill (optional)

Instructions

  1. Brush the 'outside' of the bread slices with the butter or olive oil.
  2. Slather one 'inside' slice of bread with the goat cheese. Layer with the tomato slices seasoned with salt and everything bagel seasoning. Add the fresh dill and sliced cheddar. Lastly, top with the other slice of bread.
  3. Add to a hot griddle or skillet to cook 2-3 minutes on each side, until crispy and cheese is melted. Enjoy immediately!
