The BEST Italian Ciabatta Sandwiches
The perfect sandwich for a lunch, a picnic, or a day at the beach when paired with the refreshing Vita Ice Black Raspberry!
Ingredients
Servings: 4
For the Sandwich:
- 4 17-oz. Vita Ice Black Raspberry, for serving
- 1 loaf Ciabatta Bread, sliced in half lengthwise
- 12 oz. total of Prosciutto & Salami
- 8 oz. wheel of Brie, sliced thinly
- 2 cups Arugula
- 1/2 cup Pitted Green Olives, sliced in half
- 1 Orange Bell Pepper, sliced
- 1 tsp. Olive Oil
- (Optional) Fresh Basil Leaves
For the Fig Balsamic Sauce:
- 1/4 cup Traditional Balsamic Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 2 tbsp. Fig Preserves
- Juice of 1 Lemon
- Salt & Black Pepper, to taste
Instructions
- For the Fig Balsamic Sauce, simply stir together all ingredients until well combined. Set aside.
- Toss the sliced bell peppers and olive oil together on a baking pan lined with parchment paper. Broil on high for 5-10 minutes, or until roasted and tender.
- To assemble the sandwich, spread the fig balsamic sauce on the bottom piece of ciabatta. Add the pitted and chopped olives next. Then add a single layer of sliced brie followed the roasted bell peppers.
- Add a layer each of the salami and prosciutto. Lastly, add the arugula and fresh basil leaves. Add the top piece of ciabatta. Slice into 4 sandwiches.
- Serve with Vita Ice Black Raspberry for a refreshing drink to compliment this picnic sandwich!
