This Creamy Sausage & Spinach Tortellini Soup can be made in one pot and in less than 28 minutes! With 5 simple steps, this satisfying winter soup is almost TOO easy to make ;)

What is tortellini?

Tortellini are a pasta that's originally from the Italian region of Emilia. Traditionally they are stuffed with a mix of Parmigiano Reggiano cheese, meat, egg and nutmeg. They are then served in a gorgeous broth sauce.

While you can make tortellini from scratch at home, they are widely sold in the fresh / cheese section at most grocery retailers (or frozen too).

Can tortellini soup be made ahead of time?

Yes! This soup can be stored in air tight containers in the fridge up to 2 days. It's a great cozy meal prep soup that will keep you full throughout the day.

Substitutions:

  • Tortellini = Regular Pasta
  • 1/2 cup Milk = 1/3 cup Heavy Cream
  • Italian Pork Sausage = Italian Chicken Sausage

Ingredients

Servings: 6-8

  • 1 tbsp. Olive Oil
  • 1 lb. Ground Italian Pork or Chicken Sausage
  • 1 cup Carrots, finely chopped
  • 1/2 Yellow Onion, finely chopped
  • 3 Garlic Cloves, minced
  • 2 tsp. Italian Herb Seasoning
  • 1/4 cup Flour
  • 6oz. Tomato Paste
  • 6 cups Chicken Broth
  • 1/2 cup Whole Milk
  • 9oz. Tortellini
  • 3 cups Spinach, chopped

Instructions

  1. Bring a large soup pot to heat up over Medium High heat for 1 minute. Add the olive oil and the ground sausage. Saute until browned, about 6-7 minutes.
  2. Add the chopped carrots, onion, and garlic. Saute for 2-3 more minutes.
  3. Add the herbs, flour and tomato paste. Stir until all ingredients are well combined.
  4. Stir in the chicken broth and milk. Bring to a light boil, then add the spinach. Stir until tender.
  5. Add the tortellini to cook for 2-3 minutes. Serve warm, and enjoy!

We made this tonight for supper after WEEKS of a dinner stalemate...my children, my parents and my husband and I LOVED it!!! So straightforward and you can doctor it any which way-- but really didn't need to-- might try it with vegetarian "sausage" when my vegetarian daughter comes home-- this is now going in the permanent rotation!!

Only assume you meant 19 ounces of tortellini but even that seems a little light!. 9oz is nothing?

I use the verywellfit calculator online to calculate macros when needed since it can vary based on the ingredients/brands you use. Hope that helps some :)
