Italian-style "Hotdogs" with Basil Aioli & Chicken Sausages

This is a summer grilling recipe that will have both hotdog and non-hotdog lovers united! These Italian-style “Hotdogs” are made with @amylufoods Artichoke, Leek, & Gruyere Sausages, a Homemade Basil Aioli, & an Italian Relish for a tangy yet sweet component. I found Amylu's Chicken Sausages at my local @wholefoods but you can use the store locator on their website to find a retailer nearest to you! 

What is Amylu Foods?

In 1992, Amylu Food's founder, Amy Kurzawski, pioneered the chicken sausage category. She’d been working by her grandfather’s side in the family’s traditional sausage company, and she saw an opportunity to make a healthier, pork-free product to meet the growing interest in more healthful foods!

Today, their product lineup includes almost 50 different delicious flavors, as well as meatballs and burgers. All of their products are made from simple, all-natural ingredients. And of course they're ABF with NO nitrates or nitrites!

What is Giardiniera?

Giardiniera is an Italian relish of pickled vegetables in vinegar or oil.

How to make Homemade Giardiniera?

Ingredients:

  • 1 green or red bell pepper, finely diced
  • 3-4 fresh jalapeno peppers, finely diced
  • 1 celery stalk, diced
  • 1 medium carrot, diced
  • 1 small red onion onion, finely diced
  • (Optional) ½ cup fresh cauliflower florets, finely diced
  • (Optional) Green Olives, chopped
  • 1 tbsp. Dried or Fresh Oregano Leaves
  • 1 tsp. Red Pepper Flakes
  • 1 cup White Vinegar
  • 1/3 cup Olive Oil
  • 2 tbsp. Salt

Instructions:

  1. Toss all the chopped vegetables in a large bowl until well-combined.
  2. Add the vegetable mix to a large mason jar(s).
  3. Bring the vinegar and salt to a simmer over medium high heat in a small saucepan. Stir in the red pepper flakes and oregano. Carefully pour over the vegetables until the liquids fills the jar. Seal tightly with the lid.
  4. Let sit at room temperature for 1-2 hours, until cooled down. Then transfer to the fridge to store until ready to use. Store leftovers in the fridge for up to 5 days.

Ingredients

Servings: 4

For the Basil Aioli:

  • ¾ cup Plain Greek Yogurt
  • ¼ cup Mayo
  • 3 Garlic Cloves
  • 1 cup Fresh Basil
  • ¼ cup Lemon Juice
  • ½ tsp. Salt

To Assemble:

  • 1 package of Amylu Artichoke, Leek, & Gruyere Chicken Sausages
  • 1 tbsp. Melted Butter
  • 4 Hot Dog Buns
  • ½ cup Giardiniera, homemade or storebought
  • Fresh Basil, chopped, for serving

Instructions

  1. To Make the Basil Aioli: Combine all ingredients into a food processor. Add ¼ cup water and pulse until smooth. Add more lemon juice and/or water to desired thickness.
  2. To Make the Hot Dogs: Preheat your grill to 400F. Remove the sausages from their packaging and place on the grill to cook 3-5 minutes on each side, until fully warmed and to desired taste.
  3. Lightly brush the hot dog buns with melted butter and place face-side down on the grill to cook 30 seconds to 1 minute, until toasted.
  4. Assemble your hot dog buns with the grilled chicken sausages, giardiniera, basil aioli, and freshly chopped basil to enjoy warm!
