These (Healthier) Homemade Snickers Ice Cream Bars are made with a creamy vanilla bean ice cream, a smooth peanut butter caramel layer, crunchy peanuts, and covered in a chocolate shell to take satisfaction to the next level! They are also very simple and easy to make.

What kind of ice cream is in snickers ice cream bars?

The original snickers ice cream bars use peanut butter flavored ice cream; however, my preference is vanilla bean to keep the desert light and not overwhelming.

How are snickers ice cream bars made?

There are three main components:

  1. Ice Cream (Peanut Butter or Vanilla)
  2. Creamy Peanut Butter Layer
  3. Chocolate Coating
  4. (Optional) Caramel Layer

Any tips?

  • I recommend coating both the bottom and top layers for easy slicing and serving.
  • Make the bars in reverse (so chocolate first, peanut butter layer second, and ice cream last with another chocolate layer)
  • Slice them in the pan!!!

Ingredients

Servings: 16

  • 4 cups Vanilla Bean Ice Cream
  • 1 cup Peanut Butter, sugar-free, crunchy or smooth
  • 3 tbsp. Purecane Zero Calorie Brown Sweetener
  • 1 tbsp. Milk of choice
  • 1/2 cup Peanuts, halved or lightly crushed
  • 1 cup Chocolate, melted

Instructions

  1. Line an 8x8" baking pan with two pieces of parchment paper to create "sleeves" for easy pull-up when ready to eat.
  2. In a bowl, stir together the peanut butter, brown sweetener, and milk.
  3. Add the peanut butter mixture to the prepared pan. With wet hands, pat it down to be evenly spread out.
  4. Add the peanuts and lightly press them down to stick.
  5. Freeze for 10 minutes.
  6. Add the ice cream to the pan and use a spatula to evenly spread it out. Freeze for at least 2 hours or overnight.
  7. When ready to serve, slice into 12 squares or 6-8 rectangles IN THE PAN. Drizzle with the melted chocolate, garnish with flaky sea salt and enjoy immediately!
  8. Store any leftovers in the freezer in an airtight container for up to 1 month.
