(Healthier) Homemade Snickers Ice Cream Bars

They made with a creamy vanilla bean ice cream, a smooth peanut butter caramel layer, crunchy peanuts, and covered in a chocolate shell to take satisfaction to the next level! They are also very simple and easy to make.

Ingredients

  • 4 cups Vanilla Bean Ice Cream
  • 1 cup Peanut Butter, sugar-free, crunchy or smooth
  • 3 tbsp. Purecane Zero Calorie Brown Sweetener
  • 1 tbsp. Milk of choice
  • 1/2 cup Peanuts, halved or lightly crushed
  • 1 cup Chocolate, melted

Instructions

  1. Line an 8x8" baking pan with two pieces of parchment paper to create "sleeves" for easy pull-up when ready to eat.
  2. In a bowl, stir together the peanut butter, brown sweetener, and milk.
  3. Add the peanut butter mixture to the prepared pan. With wet hands, pat it down to be evenly spread out.
  4. Add the peanuts and lightly press them down to stick.
  5. Freeze for 10 minutes.
  6. Add the ice cream to the pan and use a spatula to evenly spread it out. Freeze for at least 2 hours or overnight.
  7. When ready to serve, slice into 12 squares or 6-8 rectangles IN THE PAN. Drizzle with the melted chocolate, garnish with flaky sea salt and enjoy immediately!
  8. Store any leftovers in the freezer in an airtight container for up to 1 month.
