The corn fritter batter can be made up to one day in advance by covering the bowl and storing in the fridge to fry next day. The corn fritters can also be fried and once cooled, stored in an airtight container to be reheated later. They last up to 4 days in the fridge. See instructions below for reheating!
Store leftover corn fritters in an airtight container in the fridge up to 4 days. Reheat corn fritters in the oven at 375F on a parchment paper line pan for 8-15 minutes, until warmed through and crispy again. The baking time will depend on the corn fritter thickness. You may also want to flip them halfway through baking or rotate the baking pan.
