Oven-Baked Crispy Parmesan Potato Wedges

They’re crispy, parmesan-y, tender on the inside, buttery and paired with a Dill Pickle Dipping Sauce… We’re making Dan-O’s TikTok Famous Crispy Parmesan Potato Wedges with a little twist!

How to make Crispy Parmesan Potato Wedges?

  1. Preheat oven to 425F. Line a rimmed baking pan with parchment paper.
  2. Cut potatoes in half longways, then score with a knife by cutting 3-4 slits on each side.
  3. Melt the butter and mix in the olive oil, 1 ½ cups grated parmesan, and Dan-O’s Cheesoning.
  4. Toss the potatoes in half of the parmesan mixture, then spread the remaining half on the prepared pan.
  5. Dip the potatoes face down in the remaining ½ cup parmesan, then lay face down on the pan in the parmesan paste.
  6. Bake for 20-25 minutes, rotating the pan halfway through, or until the potatoes are tender.
  7. Remove from oven and let cool at least 5 minutes before enjoying warm.

How to make a Homemade Dill Pickle Sauce?

Ingredients you will need:

  • 4 oz. Cream Cheese, softened
  • ½ cup Plain Greek Yogurt
  • ¼ cup Dill Pickles, finely chopped
  • ¼ cup Pickle Juice
  • 1 tbsp. Fresh Dill, chopped
  • 1 tsp. Dan’O’s Cheesoning

Then you simply stir it all together until smooth, and season with salt and black pepper to taste!

TIPS for Extra Crispy Oven-Baked Potatoes:

  • If your potatoes are not crispy yet after 25 minutes, I recommend reducing the heat to 350F and baking until crispy (probably no more than an extra 10 minutes). You want to be careful not to burn them.
  • If needed, flip the potatoes after 20-25 minutes and bake an additional 5 minutes.
  • Don't forget to score your potatoes and press them down into the parmesan butter mixture!

How to store and reheat leftover potato wedges?

Once completely cooled, store the potato wedges in an airtight container in the fridge up to 3 days. To reheat, place face down on a parchment lined baking pan to bake at 400F for 6-10 minutes, or until warmed through and crispy again.

For the Potato Wedges:

  • 1 lb. Mini Potatoes, preferably red or gold
  • ½ stick Unsalted Butter, melted
  • 1/3 cup Olive Oil
  • 1 ½ cups + ½ cup Grated Parmesan
  • 1 tbsp. Dan’O’s Cheesoning

For the Dill Pickle Dipping Sauce:
