One of the key components in hosting dinner parties is knowing how to strategize with 'Make Ahead' recipes. This dip can be made 1-2 days in a advance. When ready to reheat, cover the oven-safe baking dish with foil to bake at 350F covered for 15 minutes, then uncovered for 5 minutes, or until warmed through. The crostini is best made within 30 minutes of serving, otherwise they can become stale.

Preheat oven to 400F. Slice the very tops off the garlic heads to reveal the cloves inside, then place onto a sheet of foil with the shallots. Drizzle with the olive oil, then fold in the foil to cover. Bake 30-35 minutes, until golden and roasted tender.
In a food processor, combine all remaining ingredients, including the roasted garlic cloves and shallots (with outer shells removed). Pulse 2-3 times to blend smooth.
Transfer to a small baking dish to bake at 350F for 8-10 minutes, until warmed through and bubbly.
