Cheesy Garlic Bread Ricotta Dip
An easy dinner party appetizer that taste like elevated cheesy roasted garlic bread!
Ingredients

- Crostini, for serving
- 2 heads of Garlic
- 2 large Shallots
- 2 tbsp. Olive Oil
- 6 oz Organic Valley Cream Cheese, softened
- 1 cup Organic Valley Whole Milk Ricotta
- ½ cup Organic Valley Shredded Mozzarella
- (Optional) ½ cup Grated Parmesan
- 2 tbsp. Fresh Chives
Instructions
- Preheat oven to 400F. Slice the very tops off the garlic heads to reveal the cloves inside, then place onto a sheet of foil with the shallots. Drizzle with the olive oil, then fold in the foil to cover. Bake 30-35 minutes, until golden and roasted tender.
- In a food processor, combine all remaining ingredients, including the roasted garlic cloves and shallots (with outer shells removed). Pulse 2-3 times to blend smooth.
- Transfer to a small baking dish to bake at 350F for 8-10 minutes, until warmed through and bubbly.
- Serve warm with crostini!
