How to make better than boxed brownies?

Here are a few of the key ingredients to perfecting that fudge, moist, and crispy on the edge brownies:

  • Powdered Sugar (because it typically contains cornstarch which helps with the texture)
  • Eggs (don't try any vegan alternatives because this is key to helping them rise)
  • Water
  • Olive Oil (butter will make the brownies too gooey and oily)

  • Also!! It is better to underbake the brownies, rather than overbake them so they become dry and cake-like.

Can I make better than boxed brownies vegan?

In most cases, I would give you all tips on vegan substitutes. But unfortunately, the eggs play a vital part in today's recipe.

You'll probably notice that the recipe does not call for any baking powder nor baking soda, so beating those eggs until creamy is what'll help the brownies to rise naturally!

How to store leftover brownies?

Store any leftover brownies in an air-tight container and leave on the counter for up to 3 days, or the fridge up to 5 days. They will become more fudge as time goes on, but still delicious!

Can I freeze the brownies to make ahead?

Absolutely! I actually have half a batch of these same brownies in my freezer now for the Thanksgiving week ahead of us. It makes for the perfect sweet treat during any chaotic weekday, because you just need to let it thaw in the fridge or on the ocunter until your desired preference.

Ingredients

Servings: 16

  • 2 large Eggs
  • 1 cup Granulated Cane Sugar
  • 1/2 cup Olive Oil
  • 2 tbsp. Water
  • 1 tsp. Vanilla
  • 3/4 cup All Purpose Flour
  • 2/3 cup Cocoa Powder
  • 1/4 cup Powdered Sugar
  • 1/4 cup VitaCup Mocha Oat Milk Latte
  • 1/2 tsp. Salt
  • 1/2 cup Dark or Milk Chocolate, chopped into chunks

Instructions

  • Preheat oven to 325F. Lightly grease and line an 8x8" baking pan with parchment paper.
  • In a large bowl, beat the eggs, sugar, olive oil, water, and vanilla.
  • In a separate bowl, mix the flour, cocoa powder, powdered sugar, mocha oat milk latte, and salt.
  • Fold in the chocolate chunks.
  • Pour the egg mixture into the flour mixture, then stir until a smooth batter.
  • Transfer the batter into the prepared baking pan.
  • Bake for 25-35 minutes, or until a toothpick inserted into the center comes out partially clean. (TIP: It is better to underbake these brownies, rather than overbake them.)
  • Let the brownies cool completely in the pan (about 15 minutes) before slicing with a knife that's been lightly oiled.
