(Air Fryer) Crispy Buffalo Chicken Egg Rolls

Day 2 of my Big Game Appetizers! 🏈 These (Air Fryer) Crispy Buffalo Chicken Egg Rolls are shockingly easy to make and a fun way to enjoy the iconic buffalo chicken.

Ingredients to Make Buffalo Chicken:

  • 1 lb. Chicken Breasts, or chicken thighs, cooked and shredded
  • 1/3 cup Buffalo Sauce, or to taste, plus more for serving
  • 1/3 cup Sour Cream, plus more for serving
  • 2 Fresh Scallions, chopped
  • 2 tbsp. Fresh Cilantro, chopped
  • 1 ½ cups Shredded Cheddar, or Mexican Cheese Blend

How to Make Buffalo Chicken Egg Rolls:

  1. In a large bowl, combine the shredded chicken, buffalo sauce, sour cream, chopped scallions, and chopped cilantro. Mix well.
  2. Working one at a time, brush the edges of the egg wrapper with water.
  3. Add 2 tablespoons of the buffalo chicken into the center with 1-2 tablespoon of shredded cheese. Fold in the edges like an envelope, then roll up tightly like a burrito. Repeat with remaining egg roll wrappers.
  4. Place the egg rolls in the air fryer. Drizzle generously with olive oil.
  5. Bake on Air Fryer mode at 400F for 8-10 minutes, flipping halfway through, until crispy and golden.

What to Serve with Buffalo Chicken Egg Rolls:

  • Ranch
  • Buffalo Sauce
  • Blue Cheese Dressing
  • Sour Cream

Can Buffalo Chicken Egg Rolls be Made in Advance:

Yes, you can make the buffalo chicken egg rolls in advance but do NOT bake them until ready to serve. Since they are made in the air fryer, there is the potential for them to get burnt when you reheat them a second time. I recommend making them up the Air Frying step, then when ready to serve, bake as instructions list.

A fun twist on buffalo chicken dip turned into crispy egg rolls made in the air fryer!

Ingredients

Servings: 8-10

  • 1 lb. Chicken Breasts, or chicken thighs, cooked and shredded
  • 1/3 cup Buffalo Sauce, or to taste, plus more for serving
  • 1/3 cup Sour Cream, plus more for serving

  • 2 tbsp. Olive Oil

Instructions

  6. Enjoy warm with extra buffalo sauce and sour cream, or ranch!
