How to make Grilled Baby Bell Peppers:
In a large bowl, toss together all the bell pepper ingredients. Cover and let marinate for at least 15 minutes.
Preheat grill to 450F.
Place the bell peppers on the grilling racks to cook 4-5 minutes on each side, until lightly charcoaled.
Slice the feta block in half. With the first feta half, slice it into tiny bite-size pieces. Toss the feta bites in the remaining marinade. Set aside.
Place the grilled baby bell peppers on a serving platter, then top with the feta bites, and drizzle with any remaining marinade on top.

8 oz. block Feta Cheese
½ cup Plain Greek Yogurt
¼ cup Fresh Dill
¼ cup Fresh Mint Leaves
Juice of 1 Lemon

2 tbsp. Olive Oil
1 tsp. Fine Sea Salt
For the Minty Feta Dipping Sauce:
8 oz. block Feta Cheese
½ cup Plain Greek Yogurt
¼ cup Fresh Dill
¼ cup Fresh Mint Leaves
Juice of 1 Lemon
Salt & Black Pepper, to taste
