(Air Fryer) Crispy Buffalo Chicken Egg Rolls
A fun twist on buffalo chicken dip turned into crispy egg rolls made in the air fryer!
Ingredients
Servings: 8-10
- 1 lb. Chicken Breasts, or chicken thighs, cooked and shredded
- 1/3 cup Buffalo Sauce, or to taste, plus more for serving
- 1/3 cup Sour Cream, plus more for serving
- 2 Fresh Scallions, chopped
- 2 tbsp. Fresh Cilantro, chopped
- 1 ½ cups Shredded Cheddar, or Mexican Cheese Blend
- 8-10 Egg Roll Wrappers
- 2 tbsp. Olive Oil
Instructions
- In a large bowl, combine the shredded chicken, buffalo sauce, sour cream, chopped scallions, and chopped cilantro. Mix well.
- Working one at a time, brush the edges of the egg wrapper with water.
- Add 2 tablespoons of the buffalo chicken into the center with 1-2 tablespoon of shredded cheese. Fold in the edges like an envelope, then roll up tightly like a burrito. Repeat with remaining egg roll wrappers.
- Place the egg rolls in the air fryer. Drizzle generously with olive oil.
- Bake on Air Fryer mode at 400F for 8-10 minutes, flipping halfway through, until crispy and golden.
- Enjoy warm with extra buffalo sauce and sour cream, or ranch!
