Call me a rabbit, because I would pick this Summer Peach & Caramelized Walnut Salad any day! It is the perfect sweet & salty combination that will send your taste buds to Heaven!

This lightly sweet, peachy salad is perfect for family gatherings or summer dinners/lunches! It has the right balance of saltiness from the blue cheese that scales down the sweetness of the peaches... creating a PERFECT salad.

The really cool part about this salad is the fact that you can really just wing it! If you know your taste buds and what your prefer in your salads, then just by looking at the ingredients you can toss this salad together in less than 6 minutes!

The caramelized walnuts are super EASY. You simply add them in a pot over medium high heat with a little extra virgin olive oil and a good amount of honey, and let them do their thing as they caramelize! Fair warning though, the walnuts can start burning within the blink of an eye.... so definitely keep a watch on them and stir them frequently to prevent any burn.

Other than that, I would eat the caramelized walnuts all by themselves, that is how good they are! Make plenty and save them for a snack later today or in your lunch tomorrow ... or even for a dessert tonight!

Ingredients

  • 1 tbsp. Honey
  • 1/4 cup Walnuts
  • 1 tbsp. Extra Virgin Olive Oil
  • 4-5 cups Spring Mix
  • 1 tbsp. Chives, (chopped)
  • 2 Peaches, (thinly sliced)
  • 1/4 cup Blue Cheese

For the Vinaigrette:

  • 1 tsp. Honey
  • 1 tbsp. Extra-Aged Balsamic Vinegar
  • 1 tbsp. Extra Virgin Olive Oil
  • 1/4 tsp. Sea Salt
  • 1/4 tsp. Black Pepper

Instructions

  1. In a small pan over medium high heat, add in the extra virgin olive oil. Allow the olive oil to warm up for 1 minute. Add in the walnuts and honey. Constantly stir around the walnuts to prevent them from burning and cook for 3-5 minutes, until caramelized. Allow them to cool before adding to salad.
  2. In a large bowl, toss together the blue cheese, spring mix, candied walnuts, chopped chives, and thinly sliced peaches.

For the Vinaigrette:

  1. In a glass jar or small bowl, shake or whisk together all ingredients to fully incorporate them with each other. Drizzle the salad dressing on top of the salad bowl and give a final toss together to coat the salad in the vinaigrette.
