Summer Peach & Caramelized Walnut Salad
Ingredients
- 1 tbsp. Honey
- 1/4 cup Walnuts
- 1 tbsp. Extra Virgin Olive Oil
- 4-5 cups Spring Mix
- 1 tbsp. Chives, (chopped)
- 2 Peaches, (thinly sliced)
- 1/4 cup Blue Cheese
For the Vinaigrette:
- 1 tsp. Honey
- 1 tbsp. Extra-Aged Balsamic Vinegar
- 1 tbsp. Extra Virgin Olive Oil
- 1/4 tsp. Sea Salt
- 1/4 tsp. Black Pepper
Instructions
- In a small pan over medium high heat, add in the extra virgin olive oil. Allow the olive oil to warm up for 1 minute. Add in the walnuts and honey. Constantly stir around the walnuts to prevent them from burning and cook for 3-5 minutes, until caramelized. Allow them to cool before adding to salad.
- In a large bowl, toss together the blue cheese, spring mix, candied walnuts, chopped chives, and thinly sliced peaches.
For the Vinaigrette:
- In a glass jar or small bowl, shake or whisk together all ingredients to fully incorporate them with each other. Drizzle the salad dressing on top of the salad bowl and give a final toss together to coat the salad in the vinaigrette.
