She's spicy, sweet, and little tart. This (NonAlcoholic) Spicy Apricot Margaritas is a super fun way to use those bright seasonal apricots that are overflowing the grocery shelves. And you can use the spicy apricot preserves leftovers to serve with steak or as a marinade for chicken - definitely worth the try!
How to make (NonAlcoholic) Spicy Apricot Margaritas?
In a large saucepan over medium high heat, add the chopped apricots, jalapeños, lemon juice, and water.
Bring to a boil then simmer for 10 minutes, until apricots have softened and juicy.
Transfer the mixture to a food processor or high speed blender.
Add the honey (or maple syrup to make it vegan).
Pulse until smooth. Transfer to a glass bitters bottle.
Garnish the rim of your cocktail glasses with honey or lime juice, then roll in tajin.
Add ice cubes to the glass.
Pour in equal parts of the Spicy Apricot Syrup to Club Soda. For example, 1/4 cup of the syrup and 1/4 cup club soda.
Garnish with a few thinly sliced jalapeños to enjoy!
How long will the homemade cocktail syrup last in the fridge?
When stored properly in a glass container with a lid, homemade cocktail syrup can last 4-5 days. Syrups made with fruits won't last as long as typical sugar-based syrups, so it's best to use within 3 days.
In fact, I used the leftovers of this sauce to serve on the side of steak and as a marinade for chicken. It's definitely worth making and keeping for savory uses!
