Our lightly sweet, caramel-y, and creamy Maple Chai Deconstructed Mini Cheesecakes take only ten minutes to make, and will easily become a crowd favorite!

How to make deconstructed cheesecake?

  1. Add the graham cracker base... I used chocolate graham bunnies for the bottom layer to compliment the maple chai cheesecake flavor.
  2. Blend the cheesecake ingredients together until creamy, then evenly divide between the cups.
  3. Top with a drizzle of caramel and a dollop of whip cream.

Can I make no-bake cheesecake ahead of time?

Absolutely!

In fact, I would even recommend making this in advance and placing in the fridge for at least 30 minutes prior to serving to help the flavors to blossom! However, keep in mind that the longer it sits in the fridge, the softer the graham "crust" will become.

So, a typical slice of cheesecake can rack up about 250+ calories with 18 grams of fat. No regrets, right?

Maple Chai Deconstructed Mini Cheesecakes

Ingredients

  • 8 oz Softened Neufchâtel Cream Cheese
  • 1/4 cup PICNIK Keto Creamer
  • 2 tbsp. Maple Syrup
  • 1 tsp. Chai Spice Mix
  • 1 tsp. Vanilla Bean Paste
  • Caramel, to serve
  • Graham Crackers, regular or chocolate, to serve
  • Whip Cream, to serve

Instructions

1. In 4-6 small serving cups, add a layer of crushed graham crackers.

2. To make the cheesecake, add the cream cheese, creamer, maple syrup, chai spice mic, and vanilla bean paste to a food processor to blend until smooth.

3. Evenly distribute the cheesecake mixture into the cups.

4. Add a dallop of soft caramel, then whip cream to enjoy!
