Healthier Bakery-Style Lemon Blueberry Scones

Scones are one of those decadent treats that I thought was just for bridal and baby showers... Little did I know how easy they were to make and how much healthier you can make them at home while still achieving those flaky layers that just melt in your mouth! Today’s Healthier Bakery-Style Blueberry Scones are inspired by your favorite coffee shop with lemon zest and fresh blueberries folded in for a bright spring breakfast pastry.

How to make homemade scones?

  1. Preheat oven to 400F. Line a baking tray with parchment paper.
  2. In a large bowl, mix the flour, baking powder, and salt together.
  3. Add the very cold cubed butter and use your fingers to lightly mix until a variety of crumb-like texture.
  4. Add the yogurt, buttermilk, maple syrup, and lemon zest. Mix just until combined. It’ll be a shaggy dough.
  5. Add the blueberries and fold again just until combined. Be careful not to burst the blueberries.
  6. Transfer the dough to a clean surface. Use your hands to press the dough to be 1” thick, then slice it in half and stack the two halves.
  7. Gently press down again to be flattened circle that is 2” thick. Cut into 8 equal triangles.
  8. Place the scones on the prepared baking pan, 2-3” apart.
  9. Brush with an egg wash or milk and sprinkle with a little granulated sugar.
  10. Bake for 20-25 minutes, until golden brown.
  11. To make the glaze, simply whisk all ingredients together until smooth and runny. Adjust to taste, if necessary. Add the glaze to the baked and halfway cooled scones.

The Trick to Buttery Flaky Scones:

  1. Follow the biscuit-method: Prepare the dough by sifting together the dry ingredients, cutting the butter into the mix, then folding in any liquids. Once you reach crumb-like texture, you don't want to knead but repeat the process of cutting the dough in half and stacking it then press down. This helps to create those glorious flaky layers!
  2. Use cold butter that has been chopped into tiny cubes. This will reduce the process of cutting the butter into the flour mixture and keep it cold.
  3. Do not overwork the dough! Again, this goes back to the biscuit method. Instead of kneading, you'll stack and press just until combined.

Homemade scones will last about 1-2 days in an airtight container stored in a cool, dry place. They last 4-5 days in the fridge and are best warmed up in the oven at 350F for a few minutes to become flaky again on the outside.

You can make the scone dough up to 3 days in advance! Pre-cut them and all, then place on a pan and tightly cover with plastic wrap. You can also freeze the scones to bake later for up to 1 month.

Ingredients

  • BUBBL’R Triple Berry Breez’r, for serving
  • 2 cups All Purpose Flour
  • 1 tbsp. Baking Powder
  • ½ tsp. Salt
  • 5 tbsp. Unsalted Butter (very cold), cubed
  • ¾ cup Plain Greek Yogurt
  • ¼ cup Buttermilk
  • 2 tbsp. Maple Syrup or Honey
  • Zest of 2 Lemons
  • 1 cup Fresh Blueberries
