I've being using this method for years, because it's so easy and the toast come out great every time. However, I'm sure there are plenty of other ways to make the "perfect" slice of toast. Have one? Leave me a comment! I'd love to know :)
Brush both slices of the toasts with olive oil. Broil in the oven on HIGH for 1-3 minutes on EACH side, depending on the thickness of your bread slice. My 1/2" sourdough bread toast usually take 3-4 minutes on each side; however, my soft white bread take 1-2 minutes. Just keep an eye on them, checking after each minute.
This is the million dollar question, if you ask me. I've tried many recipes and they seem to always end runny or TOO thick.
I've found that the addition of whipped heavy cream (it's like making homemade whipped cream without adding sugar) helps add structure to the ricotta.
I've also used added thick plain yogurt, such as a creamy European yogurt or plain 2% Greek yogurt for an even thicker whipped ricotta. It also adds extra protein, which is always a plus!
