Crispy potato bites tossed in fresh garlic, freshly chopped herbs, and grated parmesan for the best potato recipe! These Crispy Garlic Parmesan Potato Bites are the perfect appetizer or side dish to your holiday dinners.

Step 1: Slice the potatoes in half.

Step 2: Boil the potatoes in salted water for 10-15 minutes, until fork tender.

Step 3: Drain the potatoes in a colander to steam dry.

Step 4: Add olive oil to a rimmed baking dish and place in preheated oven for 5 minutes, until hot.

Step 5: Toss the potatoes in the hot oil. Bake until crispy and golden brown.

Step 6: Toss the crispy potato bites in minced garlic, chopped rosemary, and grated parmesan. Enjoy!

Can you prep potatoes for roasting ahead of time?

Yes, you can prep the potatoes up to the roasting point. So once you boil the potatoes, let them steam dry and cool. Store in the fridge up to 2 days in advance, then roast as normal (in the recipe).

Ingredients

Servings: 3-4

  • 16 oz @tastefulselections Nibbles Potatoes
  • 1/4 cup Olive Oil
  • 2 Garlic Cloves, minced or grated
  • 1 Rosemary Sprig, chopped (or 2 tbsp parsley)
  • 1/3 cup Grated Parmesan

Instructions

  1. Preheat oven to 425F.
  2. Bring a large pot of salted water to a boil.
  3. Slice the potatoes in half then add to the boiling salted water for 10-12 minutes, until fork tender.
  4. Drain in a colander and let steam dry.
  5. In the meantime, add the olive oil to a large rimmed baking dish. Place in the oven for 5 minutes, until hot and shimmering.
  6. Toss the steam dried potatoes in the pan with the hot oil. Bake for 10-15 more minutes, until crispy and golden brown.
  7. Toss with the minced garlic, chopped herbs, and Parmesan. Season with salt and black pepper to enjoy!
