What wakes me up in the morning? Coffee and breakfast! And rolled oats are always involved... so to take a little spin on those viral cinnamon roll waffles, we're making Healthy Cinnamon Roll Oat Pancakes that take less than 10 minutes to make!

How to make vegan oatmeal pancakes?

Simply replace the egg with 1/2 banana + 1/2 tbsp. ground flaxseed :)

OR if you're not a huge fan of bananas, then replace the egg with a one flax egg.

How do I make a flax egg?

Mix together 1 tbsp. ground flaxseed + 2.5 tbsp. water. Let it sit for 5-10 minutes, until thickened. Then stir in very last into the batter.

Cinnamon Roll Oat Pancakes

Ingredients

Oat Pancakes:

  • 1/2 cup Rolled Oats
  • 1 tsp. Baking Powder
  • 1 Egg
  • 2-3 tbsp. Hot Water, to desired thickness

Filling:

  • 1 tbsp. Olive Oil or Melted Butter
  • 1/2 tsp. Ground Cinnamon
  • 2-3 tsp. Brown Sugar

Icing:

  • 1 tbsp. Cream Cheese
  • 1 tsp. Powdered Sugar, or Maple Syrup
  • Water, only a little at a time, to desired thickness

Instructions

  1. To make the filling, simply stir all ingredients together. Set aside.
  2. In a bullet blender, pulse all the oat pancake ingredients together until a smooth batter.
  3. In a skillet over medium high heat, lightly grease with olive oil or butter to heat up for 1 minute.
  4. Add the batter to the skillet to make 3-4 pancakes.
  5. Let the pancakes cook for about 1 minute, the batter should show air bubbles.
  6. Add the filling mixture in a swirl-like shape on each pancake.
  7. Either cover the pan to finish baking on low heat, or carefully flip each pancake after 30 seconds.
  8. Cook for an addition 1-3 minutes.
  9. Enjoy with a drizzle of the cream cheese frosting!
