Cinnamon Roll Oat Pancakes
Ingredients
Oat Pancakes:
- 1/2 cup Rolled Oats
- 1 tsp. Baking Powder
- 1 Egg
- 2-3 tbsp. Hot Water, to desired thickness
Filling:
- 1 tbsp. Olive Oil or Melted Butter
- 1/2 tsp. Ground Cinnamon
- 2-3 tsp. Brown Sugar
Icing:
- 1 tbsp. Cream Cheese
- 1 tsp. Powdered Sugar, or Maple Syrup
- Water, only a little at a time, to desired thickness
Instructions
- To make the filling, simply stir all ingredients together. Set aside.
- In a bullet blender, pulse all the oat pancake ingredients together until a smooth batter.
- In a skillet over medium high heat, lightly grease with olive oil or butter to heat up for 1 minute.
- Add the batter to the skillet to make 3-4 pancakes.
- Let the pancakes cook for about 1 minute, the batter should show air bubbles.
- Add the filling mixture in a swirl-like shape on each pancake.
- Either cover the pan to finish baking on low heat, or carefully flip each pancake after 30 seconds.
- Cook for an addition 1-3 minutes.
- Enjoy with a drizzle of the cream cheese frosting!
