These Pumpkin French Toast Bites are sweet, perfectly spiced, and will simply melt in your mouth! They are easy to make and made a bit healthier ;)

How to make Pumpkin French Toast?

  1. Preheat you griddle or nonstick pan to medium high heat. Lightly grease with olive oil or butter.
  2. In a large bowl, whisk the eggs, pumpkin puree, milk, pumpkin spice, cinnamon, and salt together.
  3. Slice the bread into thick equal cubes, about 1" in diameter.
  4. Quickly toss the the bread into the egg mixture to coat, then place on heated griddle.
  5. Cook 2-3 minutes, until browned on both sides.
  6. Serve with crushed pecans and pumpkin seeds. Drizzle with maple syrup and enjoy warm!

Truly, you can use any type of bread your heart so desires! However, the best breads are challah, thick Texas toast, or french bread.

How to make ahead French toast?

This is a great make ahead for school breakfasts since it's so quick and easy to make. Matter of fact, growing up, I remember this being one of my mom's favorite go-to recipes!

Work up to the final step of cooking them, then let them cool before store in a SINGLE layer in on a covered plate or an airtight container. TIP: Stacking the French toast bites may cause them to smash and not be as fluffy.

The next morning, heat them in the oven at 350F for about 6-10 minutes, or until warmed.

How to store leftover French Toast?

  • REFRIDGERATOR: Cover with foil or plastic wrap, or store in an airtight container in a SINGLE layer to prevent them from drying out.
  • Refrigerate within two hours after cooking.
  • FREEZER: Add a layer of the French toast bites to a freezer safe bag. Place a sheet of wax paper on top, then add the second layer of French toast bites, being careful not to smash them down. Seal and store in the freezer up to 1 month.

Ingredients

Servings: 3-4

  • 4 Thick Slices of Bread, preferably brioche or artisanal soft bread
  • 2 large Eggs
  • 1/4 cup Pumpkin Puree
  • 1/3 cup Milk
  • 1/2 tsp. Pumpkin Spice
  • 1/2 tsp. Ground Cinnamon
  • Pinch of Salt
  • Maple Syrup, for serving
  • Pecans (optional), for serving
  • Pumpkin Seeds (optional), for serving
