Meal Prep Breakfast Sandwiches (Freezer Friendly)
Ingredients
- 6 large Eggs
- 1/2 cup Milk
- 2 tbsp. Freshly Chopped Herbs, (such as parsley or cilantro or basil)
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
- 6 English Muffins
- Sausage Patties or Bacon or Thinly Sliced Virginia Baked Ham
- Sliced Cheese
Instructions
- Preheat oven to 350F. Grease or line a small baking pan (around 8").
- In a large bowl, whisk together the eggs, milk, chopped herbs, salt, and black pepper.
- Pour the egg mixture into the prepared pan, then bake for 15-20 minutes, until completely cooked. Allow it to cool before slicing into 6 even slices.
- Assemble the sandwiches according to your preference, then wrap each sandwich in parchment paper, then tightly in saran wrap before placing in the freezer.
- Reheat the frozen breakfast sandwiches by first removing the plastic wrap. The first option is to wrap in a paper towel to reheat in the microwave for 1 minute, flip and microwave one more minute. The second option is to reheat at 350F for 10-12 minutes, or until warm. Enjoy!
