Our Meal Prep Breakfast Sandwiches (Freezer Friendly) can easily be tailored to your liking, takes less than 25 minutes to complete, and is a perfect way to make Easter morning a little less stressful!

As much as I love being in the kitchen trying new recipes or baking for others, I also love stashing those time-saving tips in my back pocket for busier days. Especially with the @sweetmeringueco launch in less than one week, my schedule is beyond overloaded at this point 🤦🏽‍♀️ But, I try to always remember to count my blessings where I can, so I am grateful for the ability to work and the few moments I have to spare to prep these bad boys!

Unlike the breakfast sandwiches you may buy at the grocery store that when reheated are soggy, salty, and not very flavorful - our meal prep breakfast sandwiches couldn't be any better! They are high in protein, nutrient-dense, and full of all natural flavors that will keep you energized until lunchtime.

Meal Prep Breakfast Sandwiches (Freezer Friendly)

Ingredients

  • 6 large Eggs
  • 1/2 cup Milk
  • 2 tbsp. Freshly Chopped Herbs, (such as parsley or cilantro or basil)
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 6 English Muffins
  • Sausage Patties or Bacon or Thinly Sliced Virginia Baked Ham
  • Sliced Cheese

Instructions

  1. Preheat oven to 350F. Grease or line a small baking pan (around 8").
  2. In a large bowl, whisk together the eggs, milk, chopped herbs, salt, and black pepper.
  3. Pour the egg mixture into the prepared pan, then bake for 15-20 minutes, until completely cooked. Allow it to cool before slicing into 6 even slices.
  4. Assemble the sandwiches according to your preference, then wrap each sandwich in parchment paper, then tightly in saran wrap before placing in the freezer.
  5. Reheat the frozen breakfast sandwiches by first removing the plastic wrap. The first option is to wrap in a paper towel to reheat in the microwave for 1 minute, flip and microwave one more minute. The second option is to reheat at 350F for 10-12 minutes, or until warm. Enjoy!
