Apricot-PoppySeed Winter Salad Dressing (Christmas Salad)

This winter salad is bursting with seasonal flavors from crisp apples, creamy avocado, salty parmesan cheese, and tart pomegranates with a homemade Apricot-Poppyseed Winter Salad Dressing for the ultimate Christmas Day Salad!

Tips for Serving:

  • Salads are best when the dressing is poured just before serving, so I would recommend prepping the salad up to 1 hour in advance (keeping in the fridge until ready to serve).
  • Toss half of the "toppings" with the lettuce in a large serving dish, then add the remaining half on top to showcase the salad's flavors!
  • You can also make the salad dressing 2-3 days in advance, keeping it stored in an air-tight container in the fridge. However, you may need to let it sit at room temperature for 5-10 minutes to soften for drizzling.

  • Simply stir together all ingredients until creamy and well-combined.

Ingredients

For the Apricot-Poppyseed Salad Dressing:

  • 1/4 cup St. Dalfour Apricot
  • 2 tbsp. Apple Cider Vinegar
  • 1 tbsp. Extra Virgin Olive Oil
  • 2 tsp. Dijon Mustard
  • 1/2 tsp. Poppyseed
  • Salt & Black Pepper, to taste

For serving:

  • Lacinato Kale, chopped
  • Arugula
  • Avocado, sliced
  • Parmesan Cheese, grated
  • Pomegranates
  • Honeycrisp Apples, sliced
  • Brussel Sprouts, shaved
  • Pecans, crushed

Instructions

  1. To make the salad dressing, simply whisk together all ingredients in a small bowl. Add 2-3 tablespoons of water to desired thickness.
  2. Toss the kale, arugula, and shaved brussel sprouts together in a large serving bowl. Add the salad dressing to toss once more, then top with remaining salad ingredients. Season with salt and black pepper to taste before serving.
