Easter Appetizers: Cheddar Sausage Biscuits + Mini Charcuterie Bites

Let’s make two of my favorite Easter appetizer recipes! The first are these Sheet Pan Sausage Cheddar Biscuits that are my go to crowd pleaser using @jimmydean Premium Pork Regular Sausage Roll. They’re soft yet flaky and have so much flavor 🤤

The second appetizer are these insanely easy to make Salami Charcuterie Bites that are very customizable to anyone’s palette! 🍊🍯🌿 Featuring @gallosalame Deli Thin Sliced Italian Dry Salami.

How to make Sheet Pan Cheddar Sausage Biscuits?

  1. Preheat oven to 450F. Line a 9x13” rimmed sheet pan with parchment paper.
  2. In a skillet over medium high heat, add the olive oil to heat up for 1 minute. Add the sausage and break it up into small pieces with a wooden spoon. Cook until browned, about 8-10 minutes. Remove from heat to cool.
  3. In a large bowl, mix the flour, baking powder, salt, and baking soda, together.
  4. Add the cold grated butter and mix until crumb—like texture.
  5. Add the shredded cheddar, chopped chives, and ground sausage. Stir just until combined.
  6. Add the buttermilk and stir just until combined. Be careful not to overmix the batter.
  7. Transfer to the prepared pan and lightly press evenly into the pan.  
  8. Brush with more olive oil and bake for 20-25 minutes, until golden brown on top and set in the center.

How to store leftover cheddar sausage biscuits?

Store any leftovers (once completely cooled) in an airtight container in them ridge for up to 3 days.

Reheat in the oven at 350F for 5-8 minutes.

How to make Mini Charcuterie Bites?

  1. Sliced the aged cheese(s) into bite-sized cubes. Set aside.
  2. Insert a toothpick into your choice of fresh fruit, mini pickles, or pitted olives.
  3. Fold the thin sliced salame in half, then fold again in half to create a double fold. Then insert the toothpick into the center, as well. Lastly insert the toothpick into the cheese cube. Repeat with remaining salame pieces.
  4. Drizzle or serve alongside honey. Enjoy!

You can customize these charcuterie bites with any of your favorite cheeses, meats, berries, olives, pickles, the list goes on!

Ingredients

For the Cheddar Sausage Biscuits:

  • 1 lb. Jimmy Dean Por Sausage Roll (Regular)
  • 1 tbsp. Olive Oil
  • 3 cups All Purpose Flour
  • 5 tsp. Baking Powder
  • 1 ½ tsp. Kosher Salt
  • ½ tsp. Baking Soda
  • ½ cup Butter, frozen and grated
  • 2 cups Shredded Cheddar Cheese
  • 1 ¾ cup Buttermilk
  • 2 tbsp. Fresh Chives, chopped

For the Charcuterie Bites:

  • 15.2 oz Gallo Italian Dry Deli Thin Sliced Salame
  • 1 ½ lbs. Aged Cheese(s), I used a variety of Manchego and Reserved White Cheddar
  • Pitted Olives, for serving
  • Fresh Blackberries, for serving
  • Mini Pickles, for serving
  • Honey, for serving

Instructions

For the Cheddar Sausage Biscuits:

Thank you for these beautiful suggestions. Was excited to make both for Easter but our biscuits have come out with a strong bitter aftertaste. I’m guessing it’s from all the baking powder? Idk. And we accidentally baked them in a 9x13 casserole pan so they were much thicker and took more time to cook. Not sure what went wrong!
