(Air Fryer) Chicken Souvlaki Mediterranean Board ✨ This chicken recipe is simple to make in the air fryer, loaded with delicious Greek flavours, marinated in lemon, garlic and dried oregano then threaded onto skewers for an easy summer dinner!

Ingredients you'll need:

  • Wooden Skewers, soaked in water if time allows
  • 1 ½ - 2 lbs. Chicken Breasts, boneless and skinless
  • 2 tbsp. Olive Oil
  • 1 tbsp. Lemon Zest
  • 1 tbsp. Apple Cider Vinegar
  • 1 tbsp. Garlic, freshly minced or dried granules
  • 1 tbsp. Italian Herb Seasoning
  • 1 tsp. Paprika
  • 1 tsp. Ground Cumin
  • 1 tsp. Salt

How to Make Air Fryer Chicken Souvlaki:

  1. Slice the chicken breasts into bite-sized pieces.
  2. In a large bowl, combine the chopped chicken, olive oil, lemon zest, apple cider vinegar, and seasonings. Mix well. If time allows, let marinate in the fridge for 20-30 minutes.
  3. Preheat the Air Fryer at 375F for 3 minutes.
  4. Thread the seasoned chicken onto the wooden skewers. Add the skewers to the air fryer to cook for 10-15 minutes, flipping halfway through, until golden brown and fully cooked through.
  5. Enjoy the chicken souvlaki by making pita pockets with the baby spinach, hummus, tzatziki, cucumbers, cherry tomatoes, and so on!

How to Make a Chicken Souvlaki Mediterranean Board:

This is one of my favorite ways to host family and friends because it's easy, simple, and delicious!

  • Earthbound Farms Organic Baby Spinach
  • Pita Bread, halved
  • Olives
  • Crumbled Feta
  • Pickled Onions
  • Tzatziki
  • Hummus
  • Fresh Herbs and/or Microgreens
  • Cherry Tomatoes, quartered
  • Baby Cucumbers, diced

How to Make Homemade Pita:

  • 2 cups All Purpose Flour
  • 1 tbsp. Granulated Sugar, or Honey
  • 1 tbsp. Olive Oil
  • 1 tsp. Fine Sea Salt
  • 1 tsp. Instant Yeast
  • 3/4 cup Warm Water

  1. In a large bowl, combine the warm water, sugar, and yeast. Set aside to bloom 5 minutes.
  2. Add the olive oil and flour. Mix until shaggy dough and all the flour is absorbed.
  3. Knead the dough for 1-2 minutes, until a smooth and pliable dough.
  4. Cover and set aside in a warm environment for 1-2 hours, until doubled in size.
  5. Heat up the oven to 550F. Place a heavy duty baking pan or stone inside to heat up.
  6. Turn out the dough onto a lightly floured surface. Divide into 6 equal pieces. Roll each piece into a tight ball.
  7. Let rest for 10-30 minutes.
  8. Roll out the dough balls with a rolling pin so it's an even surface that's about 6" round. Let rest 10-15 minutes.
  9. Cooking in batches of 3-4 pitas, add the pitas to the heated baking pan or stone. Cook for 2 minutes, until lightly golden.

How to Store Chicken Souvlaki:

Store leftover chicken souvlaki in an airtight container in the fridge for up to 3-4 days. This chicken recipe makes incredible leftovers as the chicken is tender and can easily be reheated in the air fryer, microwave, or oven.
