This Summer Berry Salad with Grilled Chicken & a homemade Creamy Poppyseed Yogurt Dressing is bursting with fresh seasonal flavors! You have a little sweet from the berries, salty and savory addition chicken and feta cheese, plus the creamy yogurt salad dressing takes just about any salad to the next level ;)

How to make summer berry salads?

  1. To make the salad, toss together the spring mix and spinach according to the amount of people being served. (The salad dressing will serve up to 5 people.)
  2. Add the fresh berries, feta cheese, chopped pecans, avocado, and fresh basil.
  3. Toss with the salad dressing right before serving.

Ingredients

Servings: 4

For the Creamy Yogurt Poppyseed Dressing:

  • 1/3 cup Plain Greek Yogurt
  • 2 tbsp. Apple Cider Vinegar
  • 1 tbsp. Olive Oil
  • 1 tbsp. Honey
  • 1 tsp. Poppyseeds
  • Black Pepper & Salt, to taste

For the Salad:

  • Vita Ice Strawberry Lemonade Sparkling Water, for serving
  • Spring Mix
  • Spinach
  • Blackberries
  • Raspberries
  • Strawberries, trimmed sliced
  • Feta Cheese, crumbled
  • Avocado, thinly sliced
  • Grilled Chicken Breasts, thinly sliced
  • Fresh Basil, chopped
  • Candied or Roasted Pecans

Instructions

  1. To make the salad dressing, simply whisk together all ingredients until smooth and well combined. Add water to thin out the salad dressing to desired preference. Season with black pepper and salt to taste.
  2. To make the salad, toss together the spring mix and spinach according to the amount of people being served. (The salad dressing will serve up to 5 people.)
  3. Add the remaining toppings to the salad and toss with the salad dressing right before serving. Enjoy with Vita Ice Strawberry Lemonade Sparkling Water for a complimentary refreshment!
