These Chicken Shawarma Pita Pockets have been one of my favorite mediterranean recipes that can be prepped in advance for busy weeks! The chicken is marinated in a yogurt base with fresh aromatics and spices for a tangy and complex flavor. The chicken has crispy edges while still being super tender, juicy meat.
What is Chicken Shawarma?
Shawarma is chicken marinated in a creamy yogurt with fresh aromatics and spices like cinnamon and cayenne, for a tangy and complex flavor. The meat is crispy along the edges but super tender and juicy. Perfect for pita pockets!
Ingredients you'll need:
2 lbs. Chicken Thighs or Breasts, boneless and skinless
Mix all the marinade ingredients together, then add the chicken and toss to coat. Let the chicken marinate for at least 30 minutes to overnight.
Preheat the Cosori Air Fryer to 350F.
Pile the marinated chicken into the air fryer basket to cover with foil, then press down firmly to compress.
Bake for 30-35 minutes, until fully cooked inside.
Let rest for 10 minutes before slicing into thin pieces.
Add back to the air fryer at 350F for 6-8 minutes for crispier chicken edges.

I love making homemade pita because there's no preservatives, and you know all the ingredients that you'll be eating. And it's super simple to make! You just need 6 ingredients: Flour, Sugar, Instant Yeast, Salt, Water, and Olive Oil.
Can you Make Chicken Shawarma in Advance?
Yes, you can prep the chicken shawarma up to 4 days in advance. Store in air tight container and reheat either in the air fryer, on stovetop, or in the oven at 400F for 5-6 minutes, until warmed through.
