Winter Spinach, Pomegranate, & Feta Salad is filed with seasonal winter fruits and greens tossed together with a homemade salad dressing for a quick and healthy lunch!

How to make a homemade salad dressing?

My favorite dressing to make at home is this maple-dijon one that I've been making for years now. It's very easy, uses simple wholesome ingredients, and seems to please everyone's palate!

But in general, there are a few secret tips to consider:

  • Strike a balance between sweet and salty
  • Have an acid
  • Include a fat (such as olive oil, mayonnaise, yogurt, etc)
  • Add a spice (like cinnamon, Italian seasoning, black pepper, etc)

Salty

Salt adds a brightness to the salad dressing, while also softening the acid for an easily digestible flavor.

Sweet

And to balance out the salt, you'll need a sweet component like honey, maple syrup, or coconut sugar.

Acid

This is what gives salad dressing that tang and extra brightness that makes it irresistible, such as red wine vinegar, apple cider vinegar, or champagne vinegar. Lemon and limes also work wonderful.

Ingredients

For the Salad:

  • Spinach
  • Pomegranate Arils
  • Feta Cheese, crumbled
  • Fennel Bulb, thinly sliced (optional)
  • Pecans, roasted and crushed
  • Honeycrisp Apples, thinly sliced

For the Dressing:

  • 2 tbsp. Maple Syrup
  • 1 tbsp. Dijon Mustard
  • 2 tbsp. Apple Cider Vinegar
  • 1/3 cup 100% Extra Virgin Olive Oil
  • Salt, to taste
  • Black Pepper, freshly cracked to taste

Instructions

For the Salad:

  1. Toss all ingredients together to build your salad to personal preference. The salad dressings will make up to 10 servings (or 10 cups of mixed greens).

For the Dressing:

  1. Whisk together all ingredients except the olive oil until smooth.
  2. As you whisk, gradually pour in the olive oil in a steady stream.
  3. Toss with salad greens and enjoy!

Keep any remaining salad dressing in the fridge up to 5 days.
