Fried Rice is probably the easiest, cheapest, and most comforting recipes that you can make to be seasonally relevant! For me, it’s also very nostalgic - one of my favorite childhood foods! So to re-make this Shishito Jalapeno Fried Rice as an adult is comfort food to the max 🙌
When I received this super cool custom box from Minute Rice, I knew I had to make a quick and easy recipe. Because after all, school season is back in session and we can all use any shortcuts possible!
What are Minute Rice Cups?
Minute Rice Cups are tasty, easy and ready in 60 seconds. Just pop the cup in the microwave and enjoy by itself or mix in your favorite ingredients for a quick and flavorful, on-the-go meal.
Are Minute Jalapeño Rice Cups spicy?
Their Minute Jalapeño Rice Cups are such a tasty blend of onion, green peppers, and mild jalapeños for just an added touch of heat. Nothing too overpowering or spicy!
How to Make Fried Rice?
Ingredients you’ll need:
1 Carrot, finely chopped
1 Scallion, finely chopped
4 Shishito Peppers, finely chopped (or substitute with 3 tbsp. Green Peas)
2 tbsp. Yellow Onion, finely chopped
2 large Eggs, beaten
1 Minute Jalapeño Rice Cup
2-3 tbsp. Olive Oil
1 tsp. Apple Cider Vinegar
1 tbsp. Soy Sauce
(Part 1) How to Make Fried Rice:
In a large nonstick skillet over medium high heat, add 1 tablespoon of olive oil.
Add the finely chopped carrots, shishito peppers, and onions. Saute for 4-6 minutes, until fragrant and tender.
Push the vegetables to one side of the skillet.
Add the beaten eggs to the open side. Reduce heat to medium and use chopsticks or wooden spoon to gently stir them to a soft scramble.
(Part 2) How to Make Fried Rice:
Add the Minute Rice Cup (without cooking them in the microwave), chopped scallions, and remaining olive oil. Breaking up the rice and scrambled eggs with a wooden spoon, saute for 2-3 minutes.
Add the soy sauce and apple cider vinegar. Saute another 1-2 minutes.
Season with salt and black pepper to enjoy!
How to Store Leftover Fried Rice? How to Reheat?
Store leftover fried rice in an airtight container in the fridge for up to 4 days. Reheat on the stovetop with olive oil until warmed.
