I simply can not put into words how delicious this grilled cheese is! Today, we’re making this French Onion-inspired Grilled Cheese that’s a beautiful combination of caramelized onions and mushrooms, fresh thyme, crunchy sourdough bread, and @organicvalley Raw Sharp Cheddar Slices for a complex buttery finish 🥖🧈
(Part 1) How to Make A French Onion Grilled Cheese:
In a large skillet over medium-high heat, add 2 tablespoons butter.
Once melted, add the thinly sliced onions. Season with the salt and black pepper.
Cover and cook for 5-6 minutes, until softened.
Stir the onions as you add ¼ cup water to de-glaze the pan. Reduce heat to medium and continue the cooking process until the onions are deeply caramelized, about 10-15 more minutes.
(Part 2) How to Make A French Onion Grilled Cheese:
Increase heat to medium high heat again. Add the thinly sliced mushrooms, (optional) minced garlic, and chopped thyme. Saute until the mushrooms are tender.
On a slice of sourdough bread, add 1-2 slices of the Raw Cheddar Cheese, followed by 1/3rd of the caramelized onions and mushrooms, another 1-2 slices of cheese, and sandwich with a second slice of bread. Repeat with remaining sandwiches.
Butter the outside of the sandwiches, then place on a skillet over medium heat to cook 2-3 minutes, until golden on the outside and cheese is melted. Cover with a pan lid to help the cheese melt. Enjoy!

Can Caramelized Onions be Made in Advance?
Yes! In fact, I recommend keeping a large batch of these caramelized onions and mushrooms in tubberware in the fridge for 4-5 days. They're phenomenal to add onto steak crostini, inside grilled cheese sandwiches, breakfast sandwiches, soups, and so much more!
