Saucey Chinese Noodles tossed with Fresh Ginger & Caramelized Mushrooms for an easy, cozy dinner this winter season! It's like making ramen noodles, but even better ;)

How to upgrade Ramen Noodles?

Okay, so let's take this with a grain of salt. These are Chinese noodles and not ramen noodles. However, this recipe provides a similar concept to iconic ramen noodles BUT EVEN BETTER TASTING!

Here are a few ways I like to upgrade my Chinese noodles:

  1. Add a sauce: This sauce in this recipe is a good basic that you can add to just about any noodles recipe.
  2. Add caramelized mushrooms and/or onions: Simply saute the sliced mushrooms and/or onions in olive oil until tender and golden brown.
  3. Serve with kimchi
  4. Serve with soft or hard boiled eggs
  5. Add miso paste
  6. Add sriracha for an extra spicy kick!

What's the best way to cook Chinese noodles?

  1. Bring a large pot of salted water to a boil. This helps to enhance the noodles natural flavor.
  2. Cook the noodles according to package directions.
  3. Drain and rinse with cold water immediately to stop the cooking process.
  4. Toss in sesame or olive oil immediately after rinsing with cold water to keep the noodles from sticking together. It also helps them to hold their perfect texture while you prepare any other ingredients/side dishes.

Ingredients

Servings: 4

  • 10 oz. Ty Ling Chinese Noodles
  • 2 cups Spinach, lightly chopped
  • 2 cups Vegetable Broth
  • 2-3 cups Mushrooms, sliced
  • ¼ cup Honey
  • 1/3 cup Low Sodium Soy Sauce
  • 2 tbsp. Balsamic Vinegar
  • 2 tbsp. Tahini
  • 2 tbsp. Olive Oil
  • 2 Garlic Cloves, grated or minced
  • ½” Fresh Ginger, grated
  • Salt & Black Pepper, to taste

Instructions

  1. To Make the Sauce: Combine the honey, soy sauce, balsamic, tahini, and 1/3 cup water in a small bowl. Mix well. Set aside.
  2. To Make the Noodles: Bring a large pot of salted water to a boil. Cook the noodles according to package directions. Drain, rinse with cold water, then toss in sesame or olive oil. Set aside.
  3. In the same pot, add the olive oil to heat up over medium high heat.
  4. Add the mushrooms, minced garlic, and ginger into the hot pan. Sauté for 5-8 minutes, until caramelized. Add half of the sauce mixture and the cooked noodles. Cook for 1-2 minutes, until the sauce has well-coated the noodles and mushrooms.
  5. In a separate large pot, add the broth and chopped spinach into the same pot. Add the remaining sauce. Season with salt and black pepper. Stir until warm and the spinach is tender.
  6. To Serve: Distribute the noodles amount the serving bowls. Add a generous scoop of the broth on top of the noodles, or to desired taste.
  7. Garnish with sesame seeds and chopped spring onions. Enjoy warm!
