Authentic French Madeleines Recipe

One of the best things we ate in the South of France were Madeleine from this small bakery in Aix en Provence. When we got back home, I started on a journey to perfecting the perfect copycat recipe. So, here is an Authentic French Madeleines Recipe that you don't want to miss out on!

We first tried a Madeleine while in Aix en Provence at this small bakery called Christophe Madeleines - an absolute must if you're visiting the South of France! They were very popular prior to covid and just recently reopened (like first week in September 2023). Get there early and try a variety of their amazing Madeline flavors!

How to Make Homemade Madelines:

  1. Use 1 tbsp to butter the madeleines pans and place in the freezer for 30 minutes to 1 hour.
  2. In a small bowl, combine the melted 7 tbsp butter, lemon juice and a pinch of fine sea salt. Mix well and set aside.
  3. In a large bowl, beat the eggs, then gradually add the sugar as you whisk.
  4. Sift in the flour and baking powder. Mix just until combined.
  5. Add in the melted butter mixture and mix once more just until combined.
  6. If making any flavors, stir in those ingredients now.
  7. Chill in the fridge for 2 hours.
  8. Preheat oven to 400F.
  9. Evenly distribute the batter between the 12- madeleine molds pan.
  10. Bake for 3 minutes, then reduce heat to 350F to finish baking 5-6 minutes.

Authentic French Madeleines Recipe

The best thing we ate last Summer in the South of France!

Ingredients

Servings: 12 madeleines

  • 3/4 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 7 tbsp Unsalted Butter + 1 tbsp
  • 1 tsp Lemon Juice
  • 2 large Eggs
  • 1/2 cup Granulated Cane Sugar
  • 1 tbsp Honey

For the Rum Raisin:

  • 1/4 cup Rum
  • 1/4 cup Raisins

For Chocolate:

  • 1/3 cup Chocolate Chips (or chunks)

Instructions

    -> There should be a puffy hump that is set in the center and crispy golden edges. Enjoy!
