These Sheet Pan Fajitas take less than 25 minutes until ready, are easy to make, and full of flavor using wholesome ingredients. And when paired with Vita Ice Zero Calorie All Natural Lemon Lime Sparkling Water, you have yourself the perfect lunch!

How to make oven baked chicken fajitas?

  1. Preheat oven. Line a rimmed baking sheet with parchment paper.
  2. Slice the vegetables and chicken.
  3. Toss the vegetables and chicken in olive oil and seasonings.
  4. Bake for 10-15 minutes, or until fully cooked.
  5. Serve warm with tortillas, avocado, and cotija cheese. Or store in air-tight containers in the fridge until ready to serve. Enjoy!

How to meal prep fajitas?

I recommend storing the cooked chicken fajitas in proportional airtight meal prep containers. You can roll up the tortillas to add inside the containers, as well. I would also squeeze lime juice over the avocados to keep them from turning brown.

They will last up to 4 days in the fridge.

Ingredients

Servings: 4

  • 4 bottles of Vita Ice Lemon Lime Naturally Flavored Sparkling Water, for serving
  • 1 1/2 lb. Chicken Breasts, skinless and boneless
  • 3 Bell Peppers (Red, Yellow, Green, or Orange)
  • 2 tbsp. Olive Oil
  • 2 Limes
  • 1 tsp. Chili Powder
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Cumin
  • 1/2 tsp. Salt
  • 1 Medium Onion
  • Tortillas, for servings
  • Cotija Cheese, for serving
  • Jalapenos, sliced, for serving
  • Fresh Cilantro, for serving

Instructions

  1. Preheat oven to 425F. Lightly grease or line with parchment paper a large sheet pan.
  2. Cut the vegetables and chicken into bite-sized strips. (TIP: Sliced the chicken against the grain so that it's tender, and not chewy.) Lay on the prepared pan.
  3. Combine all seasoning ingredients. Sprinkle the seasoning over the vegetables and chicken.
  4. Drizzle the chicken and vegetables with the olive oil and lime juice. Toss everything well and spread out in an even layer on the pan.
  5. Cook for 15-20 minutes, or until full cooked (chicken is 165F internal temperature).
  6. Warm up the tortillas to serve with the chicken ad vegetables. Serve alongside lime wedges, fresh cilantro, sliced jalapenos, and cotija cheese. Enjoy with Vita Ice Mango Orange Sparkling Water for a refreshing complimentary drink!
