Why let minced garlic rest before cooking?

Cutting a garlic clove breaks its cells and releases stored enzymes that react with oxygen. That triggers healthy sulfide compounds, such as allicin, to form. Letting the chopped garlic stand for 10 to 15 minutes before cooking allows the compounds to fully develops before heat inactivates the enzymes.

In general, Pastina is a tiny star-shaped or tube-shaped pasta that is used in soups or a creamy dish like this recipe!

Creamy Parmesan Pastina

Ingredients

Servings: 1

  • 3/4 cup Batistini Farms USDA Organic Ancient Tuscan Grain Pastina
  • 2 1/2 cups Chicken Broth
  • 1/3 cup Freshly Grated Parmesan Cheese, plus more for garnish
  • 1 large Egg
  • Salt & Black Pepper, to taste
  • (Optional) Juice of 1 Lemon
  • (Optional) 1-2 Garlic Cloves, minced and let sit for 15 minutes

Instructions

  1. Bring the chicken broth in a saucepan over medium high heat to a boil.
  2. Add the pastina. Stir while cooking for 4-5 minutes, until al dente.
  3. Stir in the egg and grated parmesan. Add more chicken broth, if needed to make creamier.
  4. Season with salt and black pepper to taste.
  5. (Optional: Stir in the lemon juice and minced garlic.)
  6. Enjoy warm with freshly grated parmesan on top!
