Why let minced garlic rest before cooking?
Cutting a garlic clove breaks its cells and releases stored enzymes that react with oxygen. That triggers healthy sulfide compounds, such as allicin, to form. Letting the chopped garlic stand for 10 to 15 minutes before cooking allows the compounds to fully develops before heat inactivates the enzymes.
In general, Pastina is a tiny star-shaped or tube-shaped pasta that is used in soups or a creamy dish like this recipe!
My parents business, Batistini Farms, actually just received some USDA Organic Ancient Tuscan Grain Pastina that is available for ordering online with 2-day ship! Their Italian pastas are the best, no lie. They are from family friends who operate their generations-old family farm the traditional way with bronze cutting of the pasta, stone milling of the grain, and slow drying in the sun.
Their organic pastas don't taste like yucky whole wheat pasta, but are firm, flavorful, and packed with nutrition from the whole grains. Each serving contains 7 grams of protein, naturally rich in fiber, low glycemic, and full of antioxidants.
Now, it’s time to grab our aprons and begin baking deliciousness! ’till next time! xxL
