Knife-cut noodles (or knife-sliced / knife-shaved) are a type of noodle in Chinese cuisine, traditionally to the Shanzi province. Unlike pulled noodles, these noodles are prepared by thinly cutting a block of dough directly into boiling water. The result is chewier noodles that absorb their sauces/ingredients when cooking!
Knife-cut noodles are available at most grocery stores in the Asian aisle. (Not sponsored) But I love the Momofuku Noodles that I find in bulk packaging at Whole Foods!
