These Spicy Chili Parmesan Noodles have been on REPEAT this summer 🍜 They're nutty from the grated parmesan, a little spicy from the chili flakes, and all around a dish packed with flavor!

How to add protein to ramen noodles?

While this is not ramen noodles, the same proteins apply!

  • An Egg (soft boiled or hard boiled)
  • Tofu (stir fried or oven baked)
  • Sliced tempeh
  • Rotisserie chicken
  • Ground pork (browned)
  • Ground beef (browned)
  • Shrimp (stir fried is my favorite!)

What are knife cut noodles?

Knife-cut noodles (or knife-sliced / knife-shaved) are a type of noodle in Chinese cuisine, traditionally to the Shanzi province. Unlike pulled noodles, these noodles are prepared by thinly cutting a block of dough directly into boiling water. The result is chewier noodles that absorb their sauces/ingredients when cooking!

Where can I find knife cut noodles?

Knife-cut noodles are available at most grocery stores in the Asian aisle. (Not sponsored) But I love the Momofuku Noodles that I find in bulk packaging at Whole Foods!

Ingredients

 Servings: 4

  • 3 tbsp Olive Oil
  • 3 tbsp Low Sodium Soy Sauce 
  • 1 tbsp Unsalted Butter
  • 1 tbsp Honey, or Brown Sugar
  • 4 Green Onions, chopped 
  • 3 Garlic Cloves, minced 
  • 1 tbsp Red Pepper Flakes
  • 8 oz Knife-Cut Noodles
  • 1/4 cup Parmesan, grated
  • Salt & Black Pepper, to taste

Instructions

  1. Boil noodles according to package directions. Drain the water and add back into the pot. 
  2. In a saucepan over medium high heat, add the minced garlic, butter, olive oil, soy sauce, and honey. Bring to a boil.
  3. Stir in the chopped green onions, grated parmesan, and red pepper flakes. (Optional: Add a little chili crunch for extra heat and flavor.) 
  4. Add the hot sauce mixture into the cooked (and drained) noodles. Stir to combine. Season with salt & black pepper to taste. 
  5. Serve with more chopped green onions, sesame seeds, and grated parmesan. Enjoy! 🍜
