These (Quick & Easy) Oven Baked Chicken Taquitos are crunchy on the outside, cheesy-tender chicken goodness on the inside, and very simple to make!

How to make oven baked chicken?

  1. Preheat oven to 450F.
  2. Drizzle the chicken breasts in olive oil, then season with salt, black pepper, and any other seasonings desired.
  3. Add chicken breasts to a baking tray in a single layer.
  4. Bake for 16-20 minutes, or until internal temperatures reach 165F.
  5. Let the chicken rest at room temperature for 5-10 minutes before slicing. Enjoy warm!

Ingredients

Servings: 4

  • 1 1/2 lb. Chicken, cooked, shredded (see above for oven baked chicken recipe)
  • 8 Tortillas
  • 2 tbsp. Olive Oil
  • 1 tsp. Ground Cumin
  • 1 tsp. Garlic Powder
  • 1 tsp. Chili Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1/2 cup Shredded Mexican Cheese
  • Cilantro, for serving
  • Salsa, for serving
  • Lime Wedges, for serving
  • Grilled Corn (optional)
  • Guacamole & Chips (optional)
  • Shredded Lettuce (optional)

Instructions

  1. Preheat oven to 425F. Lightly grease with olive oil a baking tray or line with parchment paper.
  2. Heat up the tortillas on a griddle until soft.
  3. In a large bowl, toss together the cooked and shredded chicken, 1 tablespoon olive oil, ground cumins, garlic powder, chili powder, salt, and black pepper. Adjust seasonings to taste.
  4. Add a generous amount of the shredded chicken and shredded Mexican cheese into the center of each tortillas. Wrap up like a burrito and place seam-side down in the prepared baking pan. If possible, space the tortillas out so there is 1/2" in-between each (to make them crispy all around).
  5. Brush with the remaining olive oil.
  6. Bake for 25-30 minutes, or until golden brown and crispy.
  7. Serve with guacamole and salsa on a bed on lettuce. Enjoy warm!
