This High Fiber Mediterranean Quinoa Summer Salad is filled with bright zesty flavors, packed with nutritional value, and plain delicious!
Ingredients you'll need:
1 ½ cups Cooked Quinoa
1 bunch Kale, or 2 cups Baby Arugula, chopped
1 Red Bell Pepper, thinly sliced
1 Red Onion, chopped
2 large Sweet Potatoes, finely chopped
4 tbsp. + 2 tbsp. Olive Oil
2 tbsp. Apple Cider Vinegar
1 Lemon
1 tbsp. Honey
1 tsp. Salt
1 tsp. Black Pepper
(Optional) Pickled Onions
(Optional) Crumbled Feta

Can you Make Quinoa Salad in Advance?
Yes, I usually prep this in glass storage containers in the fridge up to 3 days. I will just add more arugula when ready to serve since that can more easily absorb the vinaigrette.
