Sticky Korean-styled beef paired with a spicy pineapple-ginger salsa and basmati rice for a flavorful, easy dinner. This (20-Minute) Sticky Pineapple Ginger Beef & Rice Bowl has become my new favorite recipe!
How to make Sticky Beef?
Heat up the olive oil in a large skillet over medium high heat for 1-2 minutes, until hot and shimmering.
Add the ground beef, break up into large chunks, and let cook untouched for 2-3 minutes, until browned. Using a spatula, break up the ground beef into smaller bite-sized chunks and cook another 2-3 minutes untouched.
Add the minced garlic and ginger. Sauce for 1-2 minutes, until fragrant.
Add the honey, soy sauce, chili crisp oil and sesame seeds. Stir to combine and stir occasionally, until fully cooked, about 4-5 more minutes.
How to Make a Pineapple Salsa?
You'll need the following ingredients:
1 1/2 cups Fresh Pineapple, finely chopped
1/4 cup Scallions, finely chopped
1/4 cup Cilantro, chopped
2 tbsp. Fresh Basil, chopped
(Optional) 1/4 cup Peanuts, crushed
1 tbsp. EACH: Honey, Olive Oil, & Apple Cider Vinegar
1 tsp. Chili Crisp Oil
Then you will simply toss all ingredients together until well-combined!
What else can I add the pineapple salsa to?
I love adding this pineapple salsa to crispy fish tacos, regular ground beef tacos, pan seared salmon over rice, shrimp salads, grilled chicken, and so many other opportunities to use it in!
Sticky Beef TIPS:
Make sure the oil is hot and shimmering before adding the beef.
Browning the beef in large chunks first will help you to have those crispy edges before you break it up into smaller pieces. It's often harder to have crispy browned beef when you break it up small to begin with.
Sauté the ginger and garlic in the beef before adding any additional ingredients or sauces.
Reduce heat to medium before adding the sauces to help them not burn.
Continue to stir the beef in the sauces until well coated.
What to serve with Sticky Beef?
Well, you already know I'm going to say this Pineapple-Ginger Salsa and Cooked Basmati Rice, but you can also serve it with cooked jasmine rice, stir fry vegetables, quinoa, legumes, Chinese or Korean-style noodles, ramen, and bok choy.
How to store leftover sticky beef? How to reheat leftovers?
Store any leftover sticky beef in an airtight container in the fridge up to 3 days. It makes for a great meal prep recipe, and can be reheat on the stovetop with a little water for added steam/moisture or in the microwave.
I truly hope you all enjoy this treasured recipe that has nestled its way into our hearts here in the ABM kitchen! ’till next time… xxL
