(Low Carb, High Protein) Nachos in a Jar
A fun dinner idea for this weekend with family and friends!
Ingredients
Servings: 4
- 1/2 box Finn Crisp Original Thin & Crispy
- 1 ripe Avocado, mashed
- 1/2 cup Black Beans, rinsed and drained
- 1/2 cup Canned Corn, rinsed and drained
- 1 large Tomato, chopped
- 1 lb. Lean Ground Beef
- 1 packet Taco Seasoning (or homemade)
- 3/4 cup Shredded Cheddar
- 1/4 cup Red Onion, chopped
- 1/3 cup Spring Onions, chopped
- 2 Jalapenos, thinly sliced
- 1 tbsp. Olive Oil
Instructions
- Add the olive oil to a large pan over medium high heat. Add in the ground beef and taco seasoning. Brown the ground beef until fully cooked, about 8 minutes. Remove from pan and set aside to cool.
- In a large jar, or equally divide out in individual jars, add the sliced jalapenos, chopped spring onions, and chopped red onion.
- Add the layer of shredded cheddar cheese.
- Add the cooked ground beef.
- Add a layer of the chopped tomatoes, canned corn, and black beans.
- Finally top with Finn Crisp Original Thin & Crispy, breaking them in half if needed. Enjoy!
