What is Finn Crisp?

The Finn Crisp story goes back to 1952 during the Helsinki Summer Olympic Games. It was the first introduction of their thin, delicate rye crisps to the public (even though their crisp bread baking tradition goes back many years prior to that). Today, they are most known for their classic wholegrain rye recipe that is baked with sourdough and has a rich rye taste for crunchy, delicious cracker.

Sneaky ways to make nachos healthier:

  • Replace half the tortilla chips with sweet potatoes (thinly sliced and roasted until golden brown)
  • Add a Greek Yogurt-Cilantro-Lime creamy sauce on top
  • Add roasted vegetables on top (such as finely chopped roasted zucchini, eggplant, okra, etc)

Ingredients

Servings: 4

  • 1/2 box Finn Crisp Original Thin & Crispy
  • 1 ripe Avocado, mashed
  • 1/2 cup Black Beans, rinsed and drained
  • 1/2 cup Canned Corn, rinsed and drained
  • 1 large Tomato, chopped
  • 1 lb. Lean Ground Beef
  • 1 packet Taco Seasoning (or homemade)
  • 3/4 cup Shredded Cheddar
  • 1/4 cup Red Onion, chopped
  • 1/3 cup Spring Onions, chopped
  • 2 Jalapenos, thinly sliced
  • 1 tbsp. Olive Oil

Instructions

  1. Add the olive oil to a large pan over medium high heat. Add in the ground beef and taco seasoning. Brown the ground beef until fully cooked, about 8 minutes. Remove from pan and set aside to cool.
  2. In a large jar, or equally divide out in individual jars, add the sliced jalapenos, chopped spring onions, and chopped red onion.
  3. Add the layer of shredded cheddar cheese.
  4. Add the cooked ground beef.
  5. Add a layer of the chopped tomatoes, canned corn, and black beans.
  6. Finally top with Finn Crisp Original Thin & Crispy, breaking them in half if needed. Enjoy!
