How to Make Crispy Stuffed Mushrooms:

Mushrooms are tricky little creatures because they retain a lot of water, that's why sometimes you'll find you oven-baked stuffed portobello mushrooms ooze liquids if not prepared properly. Which is totally OK and still delicious! But it just means to cook right before serving and making sure you pat them throughly dry before cooking.

  1. Heat up 2-3” of oil in a deep frying pot to 375F.
  2. Pat the washed mushroom dry with a paper towel. Remove the stalks and stuff each with a Boursin bite. Place in a large bowl and toss in ½ cup flour.
  3. In a large bowl, mix the remaining 1 cup flour, egg, beer, salt, and seasonings. Let sit for 5 minutes.
  4. Coat the mushrooms in the batter, then let sit in the batter another 5 minutes.
  5. Fry the mushrooms in small batches until golden brown, about 5-7 minutes.
  6. Garnish with fresh chives and serve immediately with the sriracha mayo to enjoy!
