This (V, GF) Strawberry Coconut Chocolate Chip Ice Cream is creamy, quick and easy to make, and a sweet way to cool off in the Summer's heat. And it can be made with or without an ice cream machine!

How to make sugar-free ice cream?

Our secret weapon in this summer delicacy is Purecane's Zero-Calorie, All-Natural Baking Sweetener (an alternative to regular sugar).

Troubleshooting....

  • What if my ice cream machine standard time isn't enough to mak the ice cream thick enough? I typically run the ice cream machine through 2 cycles so it's nice and thick!
  • What is the ice cream is too hard to scoop when I take it out of the freezer? I would add it into a food processor of high speed blender with a little milk, then just blend on high speed until creamy again (about 1-2 minutes).

How to make ice cream with no ice cream machine?

  1. Make your ice cream mixture (without chocolate chips or coconut shavings) according to recipe directions.
  2. Pour into a freezer-safe ziplock bag, squeeze all the air out, and seal.
  3. Freeze, laying flat, until solid (about 1-2 hours).
  4. Break up into chunks once frozen. Add the food processor or blender.
  5. Blend on high speed until completely smooth. Add in toppings as desired. Enjoy!

Ingredients

Servings: 6

  • 2 13.4-oz cans of Full Fat Coconut Milk
  • 4 cups Frozen Strawberries
  • 1/3 cup Purecane Baking Sweetener
  • 1/2 cup Chocolate Chips, or chocolate shavings
  • (Optional) 1/4 cup Coconut Shavings
  • 1 tsp. Vanilla Extract

Instructions

  1. Place the coconut milk cans in the freezer for 10 minutes.
  2. Carefully remove the tops of the cans and scoop out the coconut cream (the solid white part) into a blender or food processor.
  3. Add the frozen strawberries, baking sweetener, and vanilla extract into the blender as well. Blend until smooth and creamy, about 1-2 minutes.
  4. Stir in the chocolate chips and coconut shavings. Pour the mixture to an ice cream maker. Turn on the machine according to manufacturer instructions. Once solid and creamy, enjoy immediately or store in a freezer safe container in the freezer until ready to serve.
  5. To make without an ice cream machine, transfer the mixture out of the blender into an insulated tub or freezer-safe container. Stir the ice cream every hour for the next 4-6 hours. Enjoy!
