How to Make this Creamy Italian Sausage & Spinach Tortellini Soup:
In a large soup pot over medium high heat, add the olive oil to heat up for 1 minute.
Add the Italian sausage (removed from casing) to brown 8-10 minutes. Break up the sausage into bite-sized pieces with a spatula.
Add the chopped onion, carrots, celery, garlic, and sage. Sauté 4-5 minutes.
Stir in the flour.
Add the spinach and stir until cooked down, about 2 minutes.
Add the broth, milk, and heavy cream. Bring to a boil.
Add the tortellini pasta to cook 4-5 minutes, or until al dente.
Stir in the freshly chopped parsley. Season with salt and black pepper to taste.
Serve topped with grated parmesan to enjoy warm!

Yes, Tortellini Soup can be made in advance. Once fully cooked and completely cooled, you can store the soup in soup containers, jars with lids, or airtight food containers in the fridge up to 5 days.
How to Store Leftover Tortellini Soup? How to Reheat Leftovers?
Store leftover tortellini soup in glass jars sealed tightly with lids, or in airtight food containers, in the fridge up to 4 days. Reheat on the stovetop in a saucepan over medium high heat for 5-8 minutes, until warm to personal preference.
Can it be made dairy-free?
There are dairy-free alternatives you can use to make this soup! My personal favorite swaps are full fat coconut milk and coconut cream - amazing for all kinds of soups, curry, and stews.
