It's time to do a little happy dance because I am back with a NEW Blueberries & Cream Croissant French Toast Bake that takes less than 10 minutes of prepping before going in the oven to bake. It's creamy, crispy, flaky, and oh so delicious :)
How to make a French toast bake?
Think about how you would make normal French toast. Then, subtract all the mess. Because the only difference is that everything is being tossed together in a baking dish for you to allow the oven to do it's magic.
Preheat oven.
Make the cream mixture.
Add the sliced bread or croissants to a lightly greased baking dish.
Pour the cream mixture over top.
Bake covered for 20 minutes, then uncovered for 20-30 minutes, until golden brown on top and firm in the center.
Enjoy warm with fresh berries, maple syrup, and whipped cream!

Yes! I would recommend working up to the final step of baking the breakfast bake. Simply, cover it tightly and place in the fridge up to the day prior to baking.

Preheat oven to 350F. Lightly grease a 9x13" baking dish.
Slice the croissants into quarters, then place in a single layer in the prepared dish.
In a large bowl, whisk the eggs until well-beaten. Add the milk, brown sweetener, sea salt, vanilla extract, and blueberry jam. Mix until well-combined.
Evenly pour the mixture over the croissants. Distribute half of the blueberries on top.
Bake covered for 20 minutes, then uncovered for an additional 20 minutes, or until the tops of the croissants become golden brown.
In the meantime, add the heavy whipping cream and confectioners’ sugar into the bowl of a stand mixer. Beat on medium high speed for 4-5 minutes, or until lightly whipped.
Serve the croissant French toast bake warm with the whipped cream and fresh blueberries. Enjoy!
