Celebrate Mother’s Day with me by creating a special brunch that comes two of my mom’s favorite breakfast foods – omelets and croissants! These Croissant Egg Boats are super flaky, high in protein, and perfect for make ahead brunches.
Ingredients you'll need:
Equipment: Cosori Turboblaze Air Fryer
4 large Croissants
6 large Eggs, beaten
½ Bell Pepper, finely chopped
4 slices Bacon, chopped
1/4th Sweet Onion, finely chopped
1 cup Spinach, chopped
Salt & Black Pepper
Parmesan, grated, for garnishing
Fresh Basil, chopped, for garnishing

How to Make Croissant Egg Boats:
In a skillet over medium heat, sauté the chopped bacon, bell pepper, and sweet onion until the bacon is crispy and veggies are tender. Feel free to get creative and use your favorite omelets toppings!
Stir in the spinach to cook until tender, 1 minute. Remove from heat and add to a bowl with the beaten eggs. Season with salt and black pepper. Mix well.
Use a small, serrated knife to remove the very insides of the croissant but leaving high edges to keep the egg mixture from falling out.
Place a sheet of parchment paper on the crisper plate of your Cosori Turboblaze Air Fryer. Place the carved-out croissants on top.
Fill each croissant center with the egg mixture. Add cheese, if desired.
Bake at 350F for 10 minutes, then reduce heat to 300F for 8-10 more minutes. To test if it’s done, insert a toothpick into the center to see if it’s fully cooked through.
Enjoy warm with freshly grated parmesan and chopped basil!

Can I Make the Croissant Egg Boats in Advance?
Yes, you can make these croissant egg boats up to 3 days in advance. Once cooled, store in an airtight container in the fridge up to 3-4 days. Reheat either in the oven at 350F for 8-10 minutes or in the air fryer at 300F for 8-12 minutes, until warmed through.
