Perfect for breakfast, brunch, or dinner, this Quiche Lorraine recipe has the best filling of crispy bacon, leeks, and cheese in a flaky olive oil pie crust.

How do you make Quiche Lorraine?

  1. Make the pie crust.
  2. Bake the pie crust.
  3. Sauteed the bacon and leeks.
  4. Whisk the eggs and kefir in a large bowl, then stir in the bacon and leeks.
  5. Pour the egg mixture into the baked pie crust.
  6. Bake until firm. Enjoy warm :)

Can I prep Quiche Lorraine in advance?

Absolutely! There are two ways you could prep the quiche (that I would recommend):

  1. BEFORE ASSEMBLING: Prep the egg mixture and the pie crust. Wrap the egg bowl tightly in Saran Wrap and the pie crust separately. Place in the fridge to bake within 12 hours (or overnight).
  2. BEFORE BAKING: Prepare the quiche up to the baking step, then freeze as recommended below until ready to serve.

How to freeze Quiche Lorraine

  • FREEZE BEFORE BAKING: Place quiche on a tray or baking pan and freeze until firm. Then, wrap with freezer paper or heavy duty aluminum foil or in a freezer bag. Freeze up to one month.
  • WHEN READY TO SERVE: Remove from freezer to thaw. Bake according to the recipe instructions below.

What to serve with Quiche Lorraine?

Oh, this is my go-to brunch recipe because the side dish options are endless...

Is Quiche Lorraine Keto?

This is one fo those frequently asked questions, because quiche is very high in protein and fairly low in carbs.

The ketogenic diet is a high-fat, adequate-protein, and low-carbohydrate die that is mainly used to treat hard-to-control epilepsy in children, but is widely being used today for weightless. However, I do recommend doing adequate research into a diet that will work best for you personal health/goals.

But long story short, the answer is a little complicated. Technically, yes it is ketogenic - you can always roll out the pie crust to 1/4" thick and trim the edges to reduce excess dough from being used. Or even replace the all purpose flour with almond flour but it won't be as flaky (tends to be more chewy like a cookie).

Ingredients

For the Quiche:

  • 12 oz. Bacon, sugar-free, chopped into small pieces
  • 1 large Leek, washed and thinly sliced
  • 6 oz. Gruyere, shredded
  • 6 large Eggs
  • 1 cup Lifeway Organic Lemon Kefir
  • 1 tbsp. Extra Virgin Olive Oil
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper

For the Crust:

  • 1 3/4 cups All-Purpose Flour
  • 6-8 tbsp. Water, ice cold
  • 1/3 cup Extra Virgin Olive Oil
  • 1 Egg Yolk
  • 1/2 tsp. Salt

Instructions

For the Crust:

  1. Preheat oven to 375F.
  2. Pulse all ingredients together until well-combined, or knead together on a clean surface. Dough should be smooth and pliable, add ice cold water until you reach this texture.
  3. Wrap tightly in plastic wrap to rest in the fridge for 20 minutes.
  4. Roll out the dough in-between two pieces of parchment paper to 1/4" - 1/8" thick.
  5. Transfer to a lightly greased / lined pie pan. Crimp the edges. Bake for 30 minutes with dry beans filled in the center to keep it from puffing up (or press down with a fork).

For the Quiche:

  1. In a deep saucepan over medium high heat, add the olive oil to warm up for 1 minute.
  2. Add in the thinly sliced leeks and chopped bacon. Sauté for 6-10 minutes, until bacon is fully cooked and leeks are tender.
  3. In the meantime, whisk together the eggs, kefir, salt, and black pepper in a large bowl.
  4. Add in the sautéed leeks and bacon bits. Stir in the gruyere cheese last.
  5. Pour the mixture into the baked pie crust. (Optional: Top with more shredded cheese.)
  6. Bake for 30 minutes. Let cool for 10-15 minutes prior to serving. Enjoy warm!

So delicious! I did drain some of the bacon fat before adding it to the quiche and it still turned out great! Also first time making an olive oil crust. So good! Thank you for the recipe!
