Crispy Beef Quesadillas Recipe

One of my go-to easy dinners that’s high in protein! These Crispy Beef Quesadillas are cheesy, comforting, and perfect for busy weeknights.  

Ingredients you'll need:

For the Quesadillas:

  • 1 lb. Lean Ground Beef
  • 2 tbsp. Olive Oil
  • 1-2 Green Scallions, chopped
  • 1 tbsp. Dan’O Tac-O Seasoning
  • 2 Garlic Cloves, minced
  • (Optional) 1-2 tsp. Honey
  • 6 Tortillas of choice, warmed
  • 1 ½ cups Shredded Cheese

For the Avocado Cilantro Crema:

  • 1 ripe Avocado
  • 1 bunch Fresh Cilantro
  • 1 cup Sour Cream, or plain Greek yogurt
  • ¼ cup Lime Juice, freshly squeezed
  • Salt & Black Pepper, to taste

How to make Sheet Pan Quesadillas:

Once you've filled your warmed tortillas, you'll add to sheet pan that has been generously drizzle in olive oil. Brush or drizzle the top sides with more olive oil, then bake at 450F for 8-10 minutes, flipping halfway through, until golden and crispy.

Ingredients

Servings: 6

For the Quesadillas:

  • 1 lb. Lean Ground Beef
  • 2 tbsp. Olive Oil
  • 1-2 Green Scallions, chopped
  • 1 tbsp. Dan’O Tac-O Seasoning
  • 2 Garlic Cloves, minced
  • (Optional) 1-2 tsp. Honey
  • 6 Tortillas of choice, warmed
  • 1 ½ cups Shredded Cheese

For the Avocado Cilantro Crema:

  • 1 ripe Avocado
  • 1 bunch Fresh Cilantro
  • 1 cup Sour Cream, or plain Greek yogurt
  • ¼ cup Lime Juice, freshly squeezed
  • Salt & Black Pepper, to taste

Instructions

  1. In a skillet over medium heat, add one tablespoon olive oil. Add the ground beef to break up with a wooden spoon and cook until browned, about 8-10 minutes. Stir in the chopped scallions, seasoning, garlic, and honey (if adding). Cook an additional 1-2 minutes.
  2. On each warmed tortilla, add a generous serving of the ground beef and shredded cheese. Fold over to enclose the fillings, then add to a skillet over medium high heat with the remaining olive oil to cook 1-2 minutes on each side, until golden and crispy.
  3. To make the avocado cilantro crema, combine all ingredients into a high-speed blender. Pulse until smooth and enjoy with the warm quesadillas!
