Crispy Beef Quesadillas Recipe
One of my go-to easy dinners that’s high in protein! They're cheesy, comforting, and perfect for busy weeknights.
Ingredients
Servings: 6
For the Quesadillas:
- 1 lb. Lean Ground Beef
- 2 tbsp. Olive Oil
- 1-2 Green Scallions, chopped
- 1 tbsp. Dan’O Tac-O Seasoning
- 2 Garlic Cloves, minced
- (Optional) 1-2 tsp. Honey
- 6 Tortillas of choice, warmed
- 1 ½ cups Shredded Cheese
For the Avocado Cilantro Crema:
- 1 ripe Avocado
- 1 bunch Fresh Cilantro
- 1 cup Sour Cream, or plain Greek yogurt
- ¼ cup Lime Juice, freshly squeezed
- Salt & Black Pepper, to taste
Instructions
- In a skillet over medium heat, add one tablespoon olive oil. Add the ground beef to break up with a wooden spoon and cook until browned, about 8-10 minutes. Stir in the chopped scallions, seasoning, garlic, and honey (if adding). Cook an additional 1-2 minutes.
- On each warmed tortilla, add a generous serving of the ground beef and shredded cheese. Fold over to enclose the fillings, then add to a skillet over medium high heat with the remaining olive oil to cook 1-2 minutes on each side, until golden and crispy.
- To make the avocado cilantro crema, combine all ingredients into a high-speed blender. Pulse until smooth and enjoy with the warm quesadillas!
